25.01.2022 Raspberry & Licorice Jam The sweet, sour flavour of raspberries are perfect teamed with mildly spicy anise of licorice root. Many recipes call for confectionery licorice, here we use a 5 cm piece of fresh root along with two fronds of the plant. If you dont have access to it, use 40 -60 g soft eating licorice, chopped. Ingredients 1 kg Raspberries... 5 cm piece fresh licorice root, finely chopped 2 licorice fronds - finely chopped 50g Fowlers Jamsetta 1 kg sugar, warmed 1/4 cup water 2 tbs lemon juice Method Wash and drain raspberries, wash and finely chop liqorice. Place raspberries and water in your Fowlers Preserving Pan. Bring to the boil and then simmer gently until fruit is soft and pulpy (approx 15-20 mins). Add warmed sugar and Jamsetta & stir until completely dissolved. Ad liqorice. Bring to the boil and boil vigorously for 6-10 minutes. Test for a set. Pour into sterilized # 14 bottles and seal immediately with Fowlers Kleerview Cellophane Jam Covers or Fowlers Preserving Wax. Jamsetta is available at all supermarkets, Kleerviews are available at Coles, IGA & Drakes.

24.01.2022 Bottled Figs There are loads of sumptuous figs in season now & they are perfect for bottling ! Figs are delicious paired with anise, orange, raspberries, vanilla, honey even fresh mint. A light syrup or honey and water can be used as a preserving liquid so team them with any of the above and youll enjoy open bottles of them mid-winter ! Method wash and dry figs, leave whole or cut into halves.... Pack into # 20 Fowlers Bottles, top up with your preferred preserving liquid ( we love water, raw honey, 1 star anise and the seeds of 1/2 a vanilla bean ). Seal with Size 3 ring, lid and clip and process in your Simple Natural Preserving kit for 60 minutes. Remove from Preserver and allow bottles to cool with clips on overnight. Remove clips and store in your pantry. See more

21.01.2022 Just some of the delicious, fast dinners you can create with Fowlers. Today we’ve made a little melange of dried olives , tomato, onion, garlic, capers (or dried pickled nasturtium pods) , rosemary and basil. Dried for around 6 hours in our Fowlers Dehydrator and then rehydrated in a cup of boiling water or stock. Amazing punchy flavours for pasta, risotto or anything really . 19.01.2022 There are so many delicious tomatoes in season now ready for bottling. Make the most of the harvest and ensure you and your family have supplies through this winter. Bottled Tomatoes Preserving Liquid Citric acid or lemon juice must be added to tomatoes in the following ratio:... (To each size bottle) - No.20 to No.31 bottles add 2 tsps lemon juice or tsp citric acid - No.36 add 2 tbls lemon juice or tsps citric acid Fill with water or tomato juice leaving a 12mm headspace, salt or sugar may be added to taste but is not necessary for effective preservation. Add sprigs of basil, rosemary or oregano as they will gently insfuse the tomatoes over time . Preparation Unpeeled/Whole/Halved/Quartered Wash carefully and either leave whole or cut into required size. Pack evenly and firmly. Fill with water or selected liquid, ( ie. water or tomato pulp ) leaving a 12mm headspace from rim of bottle, (after adding citric acid or lemon juice) Tomatoes often do not need a great deal of extra liquid added as they do contain quite a lot of moisture in themselves. Peeled Wash and drain thoroughly before blanching. Place in colander then in boiling water for 1 minute. Remove and immediately immerse in icy cold water to prevent fruit from softening. Remove skins immediately, core and cut away any green spots or weather cracks. Leave whole or cut into required size. Pack evenly and firmly into bottle leaving a small headspace. Fill with water or selected liquid, leaving a 12mm headspace from rim of bottle. Chopped/Pulp/Puree Wash carefully then cut into required size, pulp or puree in blender of food processor. Heat in saucepan to remove excess air. Allow to cool. Pack evenly into bottle (after adding citric acid or lemon juice) leaving a 12mm headspace. Processing Seal jar with ring, lid & clip and process in Simple Natural Preserving Kit for 60 minutes or process as preserver type.

16.01.2022 Bottling Persimmons Make the most of this autumns persimmon harvest. Persimmons are a largely underrated fruit for eating and bottling. They are high in dietary fibre and a good source of vitamin C and beta carotene. Traditionally the original, or astringent variety, of persimmon have been grown in Australia, this variety is best eaten when well-ripe, otherwise is can be a rather unpleasant experience. When ripe, persimmons have a delicious honey-like flavour and aroma.... Since the 1970s the Fuyu variety has also been cultivated commercially in Australia. It is flatter in appearance and is a sweeter, less astringent variety. It can be eaten ripe or unripe. The Fuyu variety can be bottled at any time, the traditional, more astringent, variety should be bottled before becoming ripe as they will be too soft for bottling. These are some of our favourites to team with persimmons ; Bottled in a light syrup made with water and raw unfiltered honey. Approx 1 dessert spoon of honey to 1 litre of water. Bottled with star anise , cinnamon quill and coconut sugar. Bottled with finely grated fresh ginger Stewed with pineapple and blended and dried in your Fowlers Ultimate Dehydrator for a sublime persimmon and pineapple fruit leather. Top with chia seeds or raw shaved coconut before drying. Once bottled, serve preserved persimmons with mascarpone and drizzle with a little honey and the zest of a lime. To Bottle. Wash and dry persimmons, remove calyx ( stem ) if desired. Cut or leave whole and pack into clean # 31 Fowlers Bottle. Select your syrup / liquid from the suggestions above, and top bottle up with liquid and spices leaving a 12 mm headspace , free from fruit and liquid. Seal with ring, lid and clip. And process as per your preserver type. See more

Ingredients 1 kg Rosellas ( or 500g each of green apples and rosellas ) 2 tbs lemon or lime juice... 50g Fowlers Jamsetta 1 kg sugar, warmed 1/4 cup water Method Wash and drain rosellas,(if youre using apples, peel and chop, we used Granny Smiths). Place rosellas (apples ) in your Fowlers Preserving Pan. Bring to the boil and then simmer gently until fruit is soft and pulpy (approx 15-20 mins). Add warmed sugar and Jamsetta & stir until completely dissolved. Bring to the boil and boil vigorously for 6-10 minutes. Test for a set. 02.01.2022 Raspberry & Pineapple Jam with Rose and Coriander Seed Ingredients 250g Raspberries... 750 Pineapple 5 coriander seeds, bruised 1/4 cup fresh Rose petals (1/8 cup if dried) 50g Fowlers Jamsetta 1 kg sugar, warmed 1/4 cup water 1/2 vanilla bean split and scraped (optional) Method Wash and drain raspberries, de-skin pineapple and chop flesh into fine pieces. Place raspberries, pineapple, coriander seeds, rose petals & vanilla in your Fowlers Preserving Pan with water.
