This is something that we are absolutely passionate about so we were thrilled to be invited. With attendees from some of Australias largest food manufacturers and think tanks, we have started the process of harnessing ideas and the opportunities presented. 06.01.2022 Many people often confuse dehydrated food with freeze dried food. The truth is they couldnt be further apart from both the process used to the end product. Whilst there are many differences between the two treatments, the following are the 4 key areas where freeze drying stands apart from dehydrated food. Flavour - the heating process used in conventional dehydrating can also destroy the flavors of the foods. In contrast, freeze drying retains the original flavour of the f...oods due to the low temperature. Nutritional Content - freeze dried foods retain the vitamins and minerals of the original food. Dehydration can break down vitamins and minerals during the preservation process and retain less of their nutritional value when compared to freeze-dried food. Some reports put these figures at 50% nutrition retained in dehydrated food vs 97% retained for freeze dried! Appearance - the freeze dried product will look like the fresh product. The dehydrated product often looks shrunken and wrinkled. Composition - freeze dried foods weigh a lot less than the dehydrated version. This has positive benefits of both storage and transport!
