21.01.2022 These fanatics Potkins are a Japanese style pumpkin not to be confused with a Jap pumpkin which is to mussy to cook this way. They are very dry and full of flavour. We are lucky to access them from our local growers. Madirazzas who do a twice weekly supply to locals. Baked Japanese Pumpkin- Retreat Cooking School - Tamworth Take the top off your Potkin and scoop out the seeds.... Chop and mix together 1 capsicum, 3 shallots using all the green ends or 2 small onions, 1 tin of bamboo shoots and 500gms of chicken mince or butter beans. You can swap in and out any vege you like. Flavour with 4 tabs soy sauce, 1 tab lime juice, 1 chilli chopped, 3 chopped garlic cloves and a large 10cm piece of ginger, grated. Fill the Potkin and replace lid. Bake in a hot oven 220deg for 30 mins then drop the temp to 190 till Potkin can be pierced with a knife. Total cooking time approximately 1 1/2 hrs, size dependant. We served it with a Ginger and Dashi sauce and steamed beans. See more
