24.01.2022 Curried Lentil, Tomato, and Coconut Soup 2 tablespoons virgin coconut oil or extra-virgin olive oil 1 medium onion, finely chopped 2 garlic cloves, finely chopped... 1 (2 1/2") piece ginger, peeled, finely grated 1 tablespoon medium curry powder 1/4 teaspoon crushed red pepper flakes 3/4 cup red lentils 1 400 gram can crushed tomatoes 1/2 cup finely chopped cilantro, plus leaves with tender stems for serving Kosher salt, freshly ground pepper 1 400 gram can unsweetened coconut milk, shaken well Lime wedges (for serving) Heat oil in a medium saucepan over medium. Cook onion, stirring often, until softened and golden brown, 810 minutes. Add garlic, ginger, curry powder, and red pepper flakes and cook, stirring, until fragrant, about 2 minutes. Add lentils and cook, stirring, 1 minute. Add tomatoes, cup cilantro, a generous pinch of salt, and 2 cups water; season with pepper. Set aside cup coconut milk for serving and add remaining coconut milk to saucepan. Bring mixture to a boil; reduce heat and simmer gently, stirring occasionally, until lentils are soft but not mushy, 2025 minutes. Season soup with more salt and pepper if needed. To serve, divide soup among bowls. Drizzle with reserved coconut milk and top with more cilantro. Serve with lime wedges.

14.01.2022 Thanks Erika!! I was initially looking for alternatives to plastic wrap and ziplock bags for transporting food and storing food at work then came across this bundle. The package arrived quite quick (during a time where there are significant delivery delays due to COVID-19) and I was happy to see that the quality of the products are really good for the price. Have already been using the stretch lids on bowls and containers - they are easy to use and dont slide off if you are ...using the correct size. The produce bags are great too especially for bananas. Previously when ive used plastic bags the bananas have gone brown/bruised even after a short journey to work but i had a banana and some other fruit in that bag and was surprised to see it still looking much like it was before i packed it away a few hours later!
