19.01.2022 Watch this space some exciting news potentially coming up in the next few weeks....but in the meantime today's bake was a loaf I made. I decided to make a sundried tomato and basil loaf. Just made it up as I went along. White started used. 2nd loaf is as yet uncut but is a 50% ww and 50% white loaf made with rye starter. 13.01.2022 I have been rather quiet these last few weeks as we are nearing our launch...we are SO excited to be able to help bring families and communities together through the art and fun of making bread at home and sharing it together around a table with a blob of butter and Jam straight out the oven. In these difficult times it is a wonderful way to create memories of togetherness with that evoking smell of bread baking in the oven. We will be supplying many types of flours and accessories for everyone from quality ryes to strong 12% protein bread flours spelt, sustainable, organic, gluten free, and breadmixes for your convenience. 10.01.2022 This is one of the loaves i decided to play around with yesterday as I have some semolina flour to use up. 50% fine semonina and 50% premium white flour with figs and herbs...lovely soft dough to work with. Very soft crumb, smooth mouth feel...Devine flavour!!! Very happy with result. 10.01.2022 Made a few different loaves of bread this past weekend for my daughters babyshower amongst other things, enjoyed feeding everyone there with home made sourdough, and standard hand kneaded breads, along with some hummingbird cupcakes, quiches, home made sausage rolls etc I love the community that sharing food brings. Our exciting news is almost ready to be launched...cant wait to share with everyone ...next post I will give a further hint...so exciting @ Perth, Western Australia

09.01.2022 Today's bake was a rye and wholemeal sourdough. Rye made with rye starter - 50% rye meal flour 40% rye flour and 10% white premium flour with a couple TSP of gluten flour dark malt and diastatic malt added. When laminating added some caraway toasted. Put in fridge overnight. Definately noticed how little gluten in this dough but happy with outcome. Wholemeal loaf made with white starter -was strong and baked same day no fridge proofing. Strange crumb though this time. Both taste great! 09.01.2022 Baked a loaf of Nigerian Agege sweet bread for a very dear friend.,..made with strong flour and tangzhong mixture... Loved the rise I got ..so different to.makinging sourdough... This feels like a walk in the park.

08.01.2022 Well today experiment was 50%ww and white flour with sweet potato and then I smoked the dough once in basket prior to refrigeration.... Tastes good although can't taste the smoking much...will try another method next time @ Perth, Western Australia

05.01.2022 Baked these beauties this morning down in Dunsborough which is 250km south of Perth. Very happy with crumb. Both at 70% hydration. White I used the rye starter. Rye and caraway unused the white starter. 02.01.2022 Malted Wholewheat and rye meal sourdough just out the oven...not a very good ear but will check in the morning on the crumb.... 01.01.2022 Today's bake. Rye starter olive and mixed herb. To try and achieve best results with the steam rather than pouring hot water in the bottom of the oven which evaporates pretty quickly at the temperatures the breads are baked at. So I poured a little bit of water in the Dutch oven under the baking paper and quickly put the lid on and put that in the oven.
