15.01.2022 Nutella Scrolls. Enough said... Makes 5 to 12 (depends how you cut them, these are big ones) 1/3 cup milk, warmed 1/3 cup brown sugar... 2 tsp (14g) dried yeast 2 1/4 cups plain flour 1/4 tsp salt 100g butter, melted and cooled slightly 2 eggs, lightly beaten filling 200g nutella 1 egg topping 2/3 cup Nutella 1/4 cup coarsely chopped roasted hazelnuts or walnuts Combine milk and 1 tbsp of the sugar in a small bowl. Add yeast and stir to combine. Place in a warm place for about 10 minutes, until frothy. Place flour, remaining sugar and salt in a large bowl and stir to combine. Make a well in the centre. Add yeast mixture, butter and eggs and mix to combine. Then use your hands to form a dough. Turn dough onto a lightly floured surface and knead for 5 minutes, until smooth and elastic. Place in a lightly oiled bowl and cover with a tea towel. Set aside in a warm place for 1 hour to prove until doubled in size. Or combine flour, remaining sugar, salt, yeast mixture, eggs and butter into a electric stand mixer and work with a dough hook on slow until comes together. Then turn up to next speed and mix until smooth and elastic. Cover and rest 1 hour. Meanwhile, make filling. Combine all filling ingredients and beat with an electric mixer for 1 minute. Preheat oven to 190oC. Grease and line a 30cm x 21cm lamington pan with baking paper. Punch down the dough. Knead in the bowl just until smooth. Turn onto a light floured surface. Use a lightly floured rolling pin to roll out the dough to a 30cm x 45cm rectangle. Spread the filling onto the dough. Starting from a long side, roll the dough into a log. Trim ends. Cut crossways into 12 slices and place in prepared pan. Use your hand to slightly flatten slices. Cover with a tea towel and place in a warm place for 20 minutes, until about doubled in size. Brush scrolls lightly with egg glaze. Bake for 15-20 minutes or until brown and cooked through. Pea, ham, potato and leek soup, with a Bush foods twist of mountain pepper and salt bush to finish 2 smoked ham hocks 2 large leeks... 1 large brown onion 5 bay leaves (whole, remove later) 10 peppercorns 10 cloves 2 litres of chicken stock 2kg potoato, can peel or not 2kg split yellow peas Salt but taste first hicks are salty 3 tbsp mountain pepper leaf optional 2 tbsp dried salt Bush powder optional Bring hocks, leeks, onion, bay leaves, peppercorns, cloves, stock, potatoes and 5 litres of water to simmer in a big pot. Simmer until hocks are soft and ready to pull apart. Remove hocks, cool to shred. Add split peas and simmer until peas are soft. You can add shredded ham hock to pot and blitz until smooth, or blitz to smooth then add ham for texture. Finish seasoning and done.
