14.01.2022 Serious Hawker Vibes with this latest Sambal @glacier51toothfish Recipe from our friend @_dereklau_ Preparation time: 15 minutes Cooking time: 15 minutes Difficulty: Easy... Ingredients ----------- 2x Glacier 51 Toothfish fillets 100g sambal belacan (from below or pre-made in bottle) Vegetable oil, for frying Banana leaf Lime, to serve Steamed rice, to serve Coriander, garnish Sambal Belacan 500g chillis 5 birds-eye chillis (chilli padi) 1 tomato 5 tbsp belacan 14 cup lime juice Sugar, for seasoning Method ----------- 1. Firstly, marinate the toothfish prior to cooking. If you’ve got sambal belacan handy, marinate the toothfish for at least 2 hours prior. Use approximately 2 tbsp to marinate both sides of the fish and set aside to rest. 2. For the sambal belacan, blitz all of the ingredients until fine. Then cook on the stove until thickened. Season with sugar and set aside. It should be spicy, salty, sweet and slightly acidic. You won’t need all of it for this recipe so save the rest for later. 3. When ready to cook, take the toothfish out of the fridge. Preheat the oven to 180 degrees. Add some oil to a frypan, and heat to medium-heat. Place the toothfish skin side down and sear for until browned on both sides (2 minutes a side). 4. Remove the toothfish fillets and place onto the banana leaf skin side down. Spread a tablespoon of sambal on top of each fillet, spreading evenly. Place into the oven at 180 degrees for 5 minutes until cooked. If you insert a knife into the middle it should start to flake, this is when you know it is done. 5. To serve, transfer to a plate, and serve with extra sambal, rice, lime and coriander. Enjoy!
13.01.2022 Keep it Simple Oven Roasted Glacier51 with Cherry Tomatoes. Add tomatoes, garlic, salt, pepper and olive oil to the pan and cook for 15 minutes at 220C. Remove from the oven, gently stir and add your Toothfish and cook for a further 7-10 minutes until fish isn’t translucent and tomatoes begin to burst. Remove from oven, add fresh basil leaves and divide among serving plates. Enjoy!

05.01.2022 We’re honoured to have received the award for ‘Best Sustainable Seafood Product’ during the @mscbluefishtick Sustainable Seafood Awards for the second year running. This year our retail portions were the focus. Integrated with revolutionary blockchain food traceability platform OpenSC this is a world-first in seafood sustainability and traceability technology. Consumers can take a journey on a truly incredible ocean to plate story simply by scanning a QR code located on the f...ront of the retail portion pack. Each QR Code traces the portion back to a single fish (via RFID tagging), to the day of capture and the name of the vessel and captain. Scanning the QR code on the front of pack using your smart phone loads an end user experience which shows where the product was caught in a MSC Certified sustainable fishery, proving at the same time that it was not caught in any marine protected areas. The 3D mapping software reveals the journey of the product from the place of capture (lat & long) all the way to the retail store in any country where the end consumer completes the final scan. Consumers want to know more about the origins of their seafood, and they want to know that their seafood was caught from a sustainable fishery. Unique block-chain technology underpins the data captured at each scan to ensure the data cannot be tampered with, ensuring customers paying for MSC Certified Glacier 51 Toothfish are in fact buying the real product.
