25.01.2022 An extra thick potato / cheesy crust is all I want this weekend. To get the tastiest crust try our Dutch or Sebago #organic potatoes. We’ve always felt the best organic buys are your root and tuber vegetables - simply because they lay about in the ground sucking up all the water, nutrients and also all the nasties. These potatoes are grown with love at Murray Bridge, have great flavour and well worth hunting down in the organic section.

21.01.2022 **TOP 10 REPOST** cause juicing’s the easiest way to a mid winter #glowup Colour me a rainbow with these easy, at home juice recipes including a very, berry beauty juice and a pumpkin potion (recipes ). VERY BERRY BEAUTY JUICE... INGREDIENTS 2 cups of straws, washed & hulled Juice from 1/2 lime or lemon, freshly squeezed 1Tbsp sugar (optional) 1 cup cold water 2 ice cubes 1. Throw in the blender, blitz and pour over ice - simple. GREENS ARE GOOD INGREDIENTS 1 celery stalk 1 green apple 1/2 cucumber 1cup green leafy greens (try kale and parsley) 1 cup cold water 2 ice cubes 1. Throw in the blender, blitz and pour over ice - simple. If you don’t enjoy pulp in your juice, use a small mesh sieve to pour the juice through, and use the back of a spoon to press the pulp into the sieve to extract as much liquid as possible. PUMPKIN POTION INGREDIENTS (makes lots) 4 L apple cider apple juice works fine too 500g pumpkin puree 1/2 cup sugar 1/2 cup brown sugar 2 tsp pumpkin pie spice tsp vanilla 1. WAKE ME UP INGREDIENTS 1/2 cup orange juice (freshly squeezed) 1 banana, roughly cut 4 soft, @NaturesDelightAustralia pitted dates 1 cup almond milk 1/2 tsp ginger, crushed 1 tsp chia seeds Pinch salt (optional) 1. In a microwave safe cup, combine the orange juice and dates. Microwave them on high for 15 seconds. Pour into a blender with the remaining ingredients. 2. Throw in the blender, blitz and pour over ice.

18.01.2022 Recipe It’s local strawberry season - which means organic strawbs are now available. For all the strawberry lovers this organic, no churn, icecream will hit your sweet spot.... INGREDIENTS 1 kg strawberries , must be ripe and #organic (for best flavour ), hulled and halved 1 tbsp white sugar 1 tsp vanilla extract (optional) 395g sweetened condensed milk 500 ml full fat cream METHOD 1. Halve strawberries, lay on baking paper and sprinkle with sugar. Roast in the oven at 160 degrees on a low heat for 1 hour. 2. Scrape strawberries into a food processor and blitz. Set aside to cool. 3. Once cooled whip with condensed milk and vanilla together. Set aside. 4. In a seperate bowl whip the cream until stiff peaks form. Gently fold the strawberry and cream mixture together. Pick your pumpkin - in this instance the more gnarly the better (I mean who wants a perfect pumpkin - you need to get your hands on the scariest one out there)... 2. Use a serrated knife to cut off the crown of the pumpkin so you can scoop out the insides (you can roast the seeds for a tasty snack). 3. Grab a black marker and draw out the face of the pumpkin to cut. For first timers keep it simple and remember you’ll be cutting the shape out with a knife. Triangle and square shapes are the easiest. Once you have your face start cutting with a small serrated knife. 4. Drop in a tea light candle and pop the hat back on.

15.01.2022 Don’t be scared - Vietnamese rice paper rolls are super easy . The trick is to get everything pre-prepared before you start rollin! recipe INGREDIENTS 100g vermicelli noodles... 10 rice paper wrappers You fav Goodness Me fillings like 1/2 cucumber and/or carrots(cut into match sticks), sliced avocado (when in season), 1/2 cup each coarsely chopped coriander and mint, Fresh lettuce leaves and spring onion, (very) thinly sliced Vietnamese mint (optional) to serve Dipping sauce 1 teeny garlic clove, chopped 30g light palm sugar, crushed 90ml lime juice 75ml fish sauce 2 small red chillies, thinly sliced METHOD 1. Place noodles in a large bowl, pour over enough boiling water to cover completely and stand until vermicelli are tender (2-4 minutes). Strain, drain well, then cut into rough 10cm lengths with scissors and place in a bowl. Have all your filling ingredients set aside and cut ready for assembly. 2. For dipping sauce, pound garlic in a mortar and pestle to a paste, pound in palm sugar to combine, then stir in remaining ingredients and set aside. 3. Fill a large bowl with hot water and work with just 1 wrapper at a time. Submerge wrapper in water to soften (10-30 seconds), then transfer to a clean damp tea towel. Working quickly, spoon your noodles along the centre of the wrapper, layer your fillings on top, fold in ends, then roll to form a sealed cylinder. Place on a tray lined with baking paper and cover with a damp tea towel. Serve with dipping sauce and Vietnamese mint.

10.01.2022 It’s a green day with this Goodness Me Fresh #vegan Buddha bowl. You can pretty much throw what you like into a Buddha Bowl - with the idea of ending up with a bowl that is so packed with veg it takes on a mountainous, rounded shape. Broccoli is a staple ingredient and thought to improve digestion, lower cholesterol, detoxify and give your body a vitamin and mineral boost (organically it's also in season and at it’s best right now so power-up ).

09.01.2022 Asian slaw must be the easiest - fuss free side (the trick is having an awesome dressing) - recipe INGREDIENTS (for the best Asian dressing) 3 Tbsp olive oil 1 Tbsp toasted sesame oil... cup rice wine vinegar 3 Tbsp brown rice syrup, agave or honey 1 Tbsp soy sauce (or GF alternative like Braggs or Coconut Aminos) 1 garlic clove, finely minced ( use a garlic press) 1 Tbsp ginger, finely chopped tsp salt tsp chili flakes or chili paste (optional - for lovers of heat) METHOD 1. Whisk Asian Slaw Dressing ingredients together in a small bowl and lavish over your thinly sliced cabbage. Serve garnished with sesame seeds and/ or crushed peanuts (optional).

METHOD... 1. Peel your beets and slice into 1/4 inch long slices. 2. Lay your beetroot slices on a baking pan dressed in olive oil with a sprinkle of harissa spice and cumin. 3. Roast at 220 degrees celsius, flipping as required. When they look deliciously toasted, remove from the oven and serve with a non fat Greek yogurt (with a sprinkle of fresh dill if you have on hand). To get baking your own rustic ‘French’ style apple pie we’ve found this tarty recipe where just like organic fruit, the charm of this pie lies in the little imperfections and end flavour. INGREDIENTS... Crust; 1 1/2 cups Flour 1/2 tsp Salt 2 Tbsp Raw Brown Sugar 12 Tbsp Unsalted ‘cold’ Butter, cut into 1cm cubes 1/4 cup iced water Filling; 4 Goodness Me organic Royal Gala Apples, peeled, cored and cut into thin slices. 1/3 cups sugar 1 tsp vanilla extract 1tsp cinnamon 2Tbsp unsalted butter, melted 1/8 tsp salt 1 egg, beaten 2 Tbsp Raw brown sugar 1. Set oven to 180 degrees celsius 2. Combine the flour, salt and sugar into a food processor and pulse. Add cold butter and continue to pulse for a further 5 seconds.until Pulse briefly to combine. Sprinkle over with iced water until just moistened and crumbly. 3. Transfer the dough to a lightly floured work surface and knead. Roll into a ball before flattening down to a disc.Dust with flour and roll to about an 8 inch diameter. Transfer to baking paper (make it large enough for your end pie to sit on) and pop in the fridge. 4. In a large bowl combine your sliced apples, sugar, vanilla, cinnamon, melted butter, and salt. 5. Take your dough from the fridge and roll to about 1/8 inch in thickness in a roundish shape (no need for perfection here) and lay on your baking tray (with the parchment underneath). Dust with flour and layer the apples on top. Fold the edges in around the apples - tucking them in for bed and pleating the edges. Coat the edges of the folded pasty with a beaten egg and sprinkle with raw brown sugar. 6. Pop in the oven and bake for 55 to 65 minutes (the apples will be tender and the pastry firm).

In a small bowl combine the shallots, jalapeño, garlic, vinegar, and 1 tsp. salt. Let sit 10 minutes before adding the coriander, parsley, and oregano. Once combined, whisk in oil and serve immediately. This sauce also makes a great marinade for red meats.

Preheat oven to 180 degrees. Grease cake tin and line with baking powder. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt. 2. Pour in the applesauce, almond milk, sugar, oil and vanilla extract and mix until combined. 3. Fold in the carrots and stir until combined. 4. Pour the cake mixture into the lined pan and bake for 35 to 40 minutes or until a toothpick comes out clean. Let the cake cool for at least 15 minutes.

06.01.2022 Pumpkin Pie peeps organic Butternut and Jap Pumpkins are looking their best, and given it’s super cold outside it seems like the perfect day to #getyourbakeon INGREDIENTS 2 large eggs plus the yolk of a third egg 1/2 cup brown sugar... 1/3 cup white sugar 1/2 teaspoon salt 2 teaspoons cinnamon 1 teaspoon ground ginger 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1/8 teaspoon ground cardamom 1/2 teaspoon lemon zest 2 cups pumpkin purée (we like ours roasted) 1 1/2 cup heavy cream 1 good pie crust (ok, so we’re cheating here) METHOD 1. Pre heat your oven to 210C 2. Beat the eggs in a large bowl and mix in the brown sugar, white sugar, salt, all spices and your lemon zest. Mix in the pumpkin purée. Stir in the cream. Beat together until everything is well mixed. 3 Pour into pie shell and bake for around 15 mins. After this lower the temperature to 180C /160C for fan forced and continue to bake for a further 45-50 minutes (It’s ready when its just set and is not so jiggly). Set aside to cool and try not to be alarmed as it deflates ( any cracks that form can be easily filled with a dollop of fresh cream which just adds to it’s deliciousness).
