24.01.2022 Preserved Eggsperiment Phase 2 | Duck Eggs Preserved in Lime Solution This is one of the safest methods of preserving eggs as lime is a natural antimicrobial used to keep disease off fruit trees. It is 100% fail proof apparently. (We will see) This method should preserve eggs for up to two years with no refrigeration required. Prime time for consumption is 9 months. Certainly long enough to get us through winter when hens are not laying. There may be some losses in texture an...d flavour but only minimal. We plan to test one egg a month to compare texture, flavour etc. This mixture is 200gms lime in 6 litres of water with 3 dozen eggs. (I could fit another couple of dozen in over the next few weeks). We will be taking 4 weeks off Catering services over Christmas from Dec 14th - Jan 18th. 11.01.2022 Tomatoes... obviously we have to make sugo. #itsagiven I like to roast my tomatoes first. There is just something about the flavour I can’t resist. Then put through a mouli and cooked down a little before bottling. But don’t through out those skins and seeds. I put them in a baking tray, roast them on low heat for a couple of hours, then purée. Ta da! Tomato conserva... a little like a tomato pesto. 07.01.2022 Preserving Eggsperiment Phase 1 | Duck Eggs preserved in salt. Eggs are completely buried in salt, pointy end down and not touching each other. We have recorded date laid and date preserved and plan to test two eggs per month and note the differences in flavour, texture etc. This method should preserve them for up to 6 months. They may loses some texture so will be best for baking or scrambled. You can also coat with food grade mineral oil, lard or olive oil to stop the dryi...ng out of the eggs. Then store them in salt. This method should preserve the eggs for up to two years! I need to buy more salt and then will try with lard and olive oil next week. 05.01.2022 Preserved Eggsperiment Phase 3 | Chinese Braised Soy Sauce Eggs with Star Anise and Cinnamon Eggs are hard-boiled and peeled, then slow-braised for several hours in a soy sauce, sugar and spice stick. They will be stored in the refrigerator to go with Asian noodle dishes and salads. The stock can be reused for eggs or tofu. The flavour of the stock develops further over time so in theory, each batch should get better. 02.01.2022 As part of 'adjusting our sails' Grazing Tasmania is moving to fully compostable packaging for our Heat and Eat Meals, including cryovac bags from Grounded Packaging. Replacing single use plastic and removing plastic from the oceans at the same time is something to be a part of.
