24.01.2022 The enchanting August full moon is so very magical I am absolutely captivated and beguiled by its beauty. My plan was to be in Athens around about now and to watch an open air concert in the Odeon Herodes Atticus with @sofiatzoniki and @ceo_mom Ive just looked at the program, and Claudio Monteverdis operatic masterpiece Il ritorno dulisse in patria is being performed on the 4th and 5th of August. ... This opera is about the return of Ulysses to his homeland. The story, taken from the second half of Homers Odyssey, tells how constancy and virtue are ultimately rewarded, and treachery and deception overcome. After his long journey home from the Trojan Wars Ulysses, king of Ithaca, finally returns to his kingdom where he finds that a trio of villainous suitors are importuning his faithful queen, Penelope. With the assistance of the gods, his son Telemaco and a staunch friend Eumete, Ulysses vanquishes the suitors and recovers his kingdom. A girl can dream!

22.01.2022 Grilled melizana, Greek salad, lettuce and mint salad (ingredients harvested from my garden) and a moorish potato salad with capers, olives, gherkins, and herbs, all brought together with olive oil, vinegar and a little mayonnaise and topped with chopped walnuts (inspired by a salad I enjoyed in Greece). Not shown here, pasta with a tomato and blue swimmer crab sauce.

20.01.2022 This is one of three pretty lavender bushes that have self-sown at my beach house. How very pretty and how very special. Each one is smaller than the other. It felt so wonderful to discover them finding their spot in the sun. It’s a reminder that life continues and that nature knows how to shine and make its own beauty, in spite of all that has been happening this year. These little lavenders filled my heart!

17.01.2022 Dionysius of Zakynthos (formerly Draganigos Sigouros) was born in 1547 on the Greek island of Zakynthos.He was educated by priests and became fluent in Greek, Italian, and Latin, and excelled in theology, becoming a monk in 1568. He received his first degree of ordination as a priest in 1570 as Daniel; he later became hieromonk of Zakynthos and Strofades. In 1577 he became Archbishop of Aegina and Poros and after a year he abdicated and settled in Zakynthos as an abbot of a ...monastery. He fell asleep on 17 December 1633, and had asked to be buried in this monastery and his grave is still to be found in the chapel of St George; a dependent of the monastery. It has been found that his body remains intact and emits a mixed fragrance of flowers and frankincense. He is venerated, and his sainthood has been proclaimed by the Patriarch of Constantinople. His feast day is celebrated on December 17, and on also on August 24th, when the Church celebrates the transfer of his holy relics. THE SAINT OF FORGIVENESS St. Dionysius was remarkable in his forgiveness and love for his fellow man. A man came to St. Dionysiuss cell and begged the saint to hide him from his pursuers. When St. Dionysius asked him why he was being pursued, the man told him that he had killed a man. The murderer did not know that he had killed the saints own beloved brother Constantine. St. Dionysius was very grieved but hid the man and did not surrender him to the law. Instead he instructed him and brought him to repentance. According to local tradition, the murderer later repented and became a monk himself at that same monastery. St. Dionysius is an example to us all for his forgiveness of even the most grievous sins against us. THE WONDERWORKER Dionysios grants his people many blessings; and many miracles are reported in connection with his ministry. THE WALKING SAINT Dionysius rests in the church which bears his name, and opening his tomb is often found impossible. It appears as though this occurs when Dionysius is out performing miracles. When the tomb can be opened his slippers are found to be worn thin. In fact, his slippers need continual replacement because of wear and tear.

15.01.2022 There’s truly something very special about arranging flowers picked from my garden and arranging them in pretty little glasses.
14.01.2022 This salad! Made with greens grown organically in my garden. Think Cos lettuce, Swiss chard, mallow, beet leaves, dandelion greens, parsley and celery. I then added thinly sliced fennel, orange cubes, slices of apple and drizzled with olive oil, white balsamic, and seasoned with salt and pepper. These greens planted in soil soaking up the sun rays and moonlight, watered gently, and nurtured lovingly. Packed with nutrients and a special liveliness that only comes from organically home grown fruits and vegetables. Dont you just love the serving spoons? Theyre a gift from my daughter Mary
13.01.2022 Sunday night is a perfect time to enjoy Rizogalo (rice and milk pudding) infused with vanilla essence and sprinkled with ground cinnamon. Hhhmmm!

It is especially baked for the occasion of losing something, needing direction, wishing for good health, happiness and love. 09.01.2022 Ive been cooking up a storm! This vegetable soup is super packed with everything that makes your body sing. Place a large pot filled 3/4 with water, add a vegetable stock cube and 1 tablespoon chicken stock. I use Massell brand. While this is coming to the boil, start chopping the veggies. 1 onion... 1/2 leek (white only) 2 carrots (1 diced, 1 grated) 1 potato 1 turnip 1 parsnip 1/2 fennel bulb 1 1/2cup pumpkin,diced 1/2 cup soup mix - various pulses (McKenzies) 1/2 cup long grain rice (added later) Salt + Pepper, to taste As you chop things up, add them to the stock together with the mixed pulses. Bring to the boil, then simmer until pulses are almost tender, then add long grain rice. Continue cooking until ready. Add hot water from kettle if you need to. Enjoy! #soup #winterwarmer

07.01.2022 Winter on the south-western side of my garden. The bare leaves of the ornamental pomegranate tree that is over 100 years old is beautiful in all seasons. I love the twisted trunk, and the way that at this time of year the red fruit hang like Christmas baubles. You can see a couple of my garden statues and the sweetly scented Daphne in full bloom. It exhilarates the senses for those making their way to my front door.
07.01.2022 August 15th is the Orthodox Feast Day of our Holy Mother. It is the day of her repose / falling asleep. May she always be with us. Happy Name Day to all celebrating today, and especially my daughter Mary, my nieces, and my great-nephews.

02.01.2022 A very rustic salad. The secret is to cut up the tomatoes and place them into the bowl and sprinkle with salt. This helps release juice from tomatoes. Then add slices of red onion to enhance flavour of tomatoes, and a sprinkle of rigani. Top with cucumber, capsicum, olives and feta. Pour over a good amount of olive oil and enjoy! Rustic is always good.
02.01.2022 Roasted vegetables - caramelised and ever so moorish! Beets, carrots, fennel, and red onion drizzled with olive oil, and sprinkled with salt and pepper. When cooked, I added finely chopped Swiss Chard harvested from my garden.
01.01.2022 Good Morning from the balcony of my beach house. I was sunbathing early taking in the warmth of the morning sun. This is my view. The sky is an unbelievable colour (no filter needed) and if you look closely you can see the moon. Not only does Wallaroo have endless blue skies on beautiful days, but also the most amazing sunsets and the darkest of night skies. You know what that means.... the sky is dripping with dazzling stars.... millions of them sparkling and twinkling. Feeling blessed, relaxed and restored
