23.01.2022 Corona virus - thoughts on how to survive (Greek) Easter. This Easter, its all about tough love Easter is a time to think about family and friends. But th...is Easter will be different to any other. Because this Easter we will show our love by NOT being with loved ones - especially if they are over 60 or 70 years. This Easter is a time to protect the elderly and the unwell in our community. And the gift we will give them is isolation. It is a gift we will give to those we love the most, and to the health workers -so that they will be able to care for us when we need it. It will be hard. Especially where there are elderly housebound parents and grandparents and we need to give emotional support this Easter. But the only safe way is with a phone call and virtual flauounes and the digital breaking of eggs !? Covid19 Coronavirus is a once in a lifetime event - an influenza pandemic where nobody has immunity there is no treatment and there is no vaccine it is highly infectious and you can have no symptoms but carry the virus ( and be infectious) for up to 5 days before you become sick. the course of the infection usually lasts around two weeks On the good side we know that 80% of cases will recover In Covid19: 1/4 of cases are subclinical 1/4 have fever and cough maybe headache or conjunctivitis 1/4 flu like symptoms that would keep you off work But 1/4 have the severe illness -including pneumonia and may end up needing a ventilator so you can breathe For these cases the lungs become severely irritable and even a speck of dust causes prolonged coughing - the distal tubules in the lungs pour out fluid and a viral pneumonia followers you cant get oxygen and you cant get rid of the carbon dioxide in the blood you may need to go on a ventilator with high oxygen to help you breathe- but even then the virus could attack the heart and the liver and the kidneys resulting in total organ failure Coronavirus is especially a life threatening disease for older people OR those with chronic conditions like: - high blood pressure - heart condition - lung disease, asthma, bronchitis, heavy smoker - diabetes the problem is that there is no treatment for any virus and particularly no treatment for COVID-19 there may be a vaccine in 1 1/2 to 2 years but even then no certainty as to its efficacy -for example even normal flu vaccine may have less than 50% efficacy - and the response to vaccine is less as we get older. Its highly likely we will have to live with Corona virus for a long time. It may become less infectious as more and more people survive the infection (herd immunity) but most probably it will remain endemic in the community i.e. we will have to learn to live with Covid19. The only defence we have at present is to reduce the quick spread of the disease - to reduce the curve (the growth in number of new cases)- so that our health system doesnt become overwhelmed We are not trying to stop everyone getting infected were just trying to control the rate of infection What we can all do So this Easter the best thing we can do for our parents and extended family and friends - is to save them from Covid 19. Dont visit them - especially if they are older. Dont ask them to come over. Not even to help you fix some thing in the house. talk to each other over the telephone or organise video conferencing Make your home into your excercise gym and entertainment and communication hub When you leave the house, always wear gloves and a mask* take them off and wash your hands when get home beware of bringing in take away food or coffee Easter is a time to think about family and friends and community. And play our role to reduce the spread of corona virus So that we don't infect those we love the most, and so that our health system will be able to care for all of us when we need it most. *my recommendation to always wear a mask outside the home ignore the controversy Wearing a mask is just being careful and also polite to other people- it signals you are taking care -and stops you accidentally touching your own nose or mouth and giving the virus entry

05.01.2022 Good morning- yesterday My daughter and I made bread. A basic white crusty bloomer loaf that can be flavoured with whatever you have like herbs, sundried tomato..., caramelised onion or olives. During the cooking we practised measuring and addition and she learnt practical hands on skills to knead. She burnt calories( its hard work) learnt to be resourceful , learnt about yeast, was thoroughly engaged for a while and we gave bread to old neighbours. We kept some dough for today to make a pizza for dinner - another activity to engage her. Below I am sharing the recipe as its easy and making bread is a valuable skill for the kids to learn. If you would like to make the recipe - it will yield 2 bloomer loaves or 1 loaf and dough for one large pizza base. The pizza recipe is up on my group and will be making it today for you to follow along Heres how to make a simple white loaf - 1 kg white flour 14g dried yeast 14g sugar 1 pint luke warm water 1 tbsp salt 2 tbsp olive oil A little melted butter 1 - add yeast and sugar to a bowl and dissolve with the water . Leave for 30 mins to go frothy. See image - if it doesnt froth then the yeast is dead and bread wont rise 2- combine activated yeast mix to 900g flour and then add salt and oil 3- knead until smooth and springy - flour worktop as you go with extra flour - place in a floured bowl and cover for 1 hr to rise 4- punch out the air - add in any flavour additions if you wish like olives, herbs , sun-dried tomatos and knead till smooth and stretchy. Place in bowl, cover and leave 40 mins 5- punch out air, knead , split into to loaf pans , cover and leave for 30 mins 6- score the top with 3 slashes, brush with melted butter, bake 210c 40 mins Stay safe x
