21.01.2022 Ripe Mango Chutney I was asked by a friend to make this ... so I looked up a few different recipes ... then took out and added in what I thought would work for me, and created this. Started with cubed ripe mango. About 1kg Red chillis. I used the less hot longer ones. I cut them open, removed the seeds then chopped them into small pieces. Place that in a pot and get that simmering.... Add 200gms of sultanas. Add a bit under 1 cup of white wine vinegar. Get up to simmering. Mash up a bit with a potato masher till the mango cubes are crushed down to size but leaves the sultanas intact. See more



20.01.2022 Sugarless Blueberry Jam. I started with about 2kgs of Blueberries. Add about 100ml of water Add 50ml of Arrowroot powder (Tapioca Powder) Add juice of 1x lemon.... Blend up mix in blender. Place in saucepan on heat and bring to simmer. Allow to simmer away with regular stirrings. The mix slowly darkens and thickens up. I figured that when it starts to slide off the spoon like just melted chocolate ... it was then about ready. Jar up Label up.

18.01.2022 Low sugar jams. After making a "no sugar" jam ... and it turned out quite well. I thought I would lower the sugar content again in my jams. I make them around 30-35% sugar (it depends on the amount of reducing that occurs while cooking. So have started making jam with around 10-12.5% sugar. I think they are perfect like that as the berry fruit is already sweet. So far it has been a Cherry Jam and a Strawberry Jam.... I will see what the feedback is like ... I am thinking people will prefer this sugar level. The only possible downside is that the jams will not keep as long with the lower sugar content.

12.01.2022 Green mango and chilli relish. Received a bag of green local mangos ... so thought I'd make a chilli relish with them. Peeled the mangos and cut off the flesh. Cut the green ends of a the hot baby red chillis. Dice a red onion.... All in the blender. Added a cup of white wine vinegar. Added 600ml of olive oil. Spiced with salt, ginger (145gm paste jar), garlic (70 gms of paste), a dash of cumin, cloves, & paprika. First blended into a paste with the blender. Then into the mixer to finely blend into a puree. Into jars. It's quite hot for those that like it hot. But not blistering hot.



11.01.2022 Green chilli sauce. ... with Jalapenos. Started by slow cooking 2x onions. Garnished with a handful of fresh rosemary. Zested and fleshed 4cmx small limes.... Chopped up about 500gms of Jalapenos. Added whole mix into pot. Added about 1/2 cup of rice wine vinegar plus salt and pepper. Hear to low simmer. Into blender to puree. Jar up. See more

03.01.2022 Red Chilli Sauce. ... with Baby Reds Chopped up 1x onion Zested and fleshed 1x lemon... Chopped up baby red chillies Pureed in blender. Then into a pot to just get to simmer. Cool it down (because I had plastic jars) Jar up. Too hot to really taste what I'm cooking properly ... but great if you like hot.
