24.01.2022 not gonna lie, I was so close to just buying a carton of almond milk because it would be easier but really if I can watch back to back episodes of rupaul’s drag race then I have time to make my own nut milk. I got this nut milk bag from Ever Eco that comes with a little recipe booklet for almond milk: soak 1 cup of raw almonds in water for 12 hours. drain them & rinse them. add almonds and 4 cups of filtered water to a blender.... place the nut milk bag over a bowl & pour milk into the bag. pull the drawstring and squeeze the bag to release the milk. store in a glass bottle in fridge for up to 3 days. 24.01.2022 well, hot dang. I've taught over 2000 hours of this marvellous thing we call yoga when I stepped into teacher training my thinking was that I could teach maybe once a week, but yoga is all I have done ever since. I am super grateful to be able to do this, and for all the teachers who have taught me, and to all my fellow teachers and friends who keep inspiring me. and most of all so ridiculously thankful for everyone who's taken the time to come to one of my classes and practice with me

23.01.2022 r e c i p e I got this baked and stuffed eggplant recipe from @honestlyhealthy. I couldnt find black onion seeds so used black pepper instead and also added quinoa to make it a little more filling ingredients: 2 eggplants... 3 tbsps sunflower oil tsp black onion seeds 1 clove garlic 1 red onion tsp coriander seeds 600g vine tomatoes 240ml water 2 tbsp coriander 20g pecorino cheese (optional) method: preheat oven to 180c halve eggplants lengthways and score the flesh with a sharp knife. place over a baking tray, drizzle with 2 tablespoons of sunflower oil and sprinkle over the onion seeds. bake in over for 40-45 minutes until the flesh is soft. meanwhile, heat leftover tablespoon of oil in a large pan and saut the grated garlic, diced onion, cumin, turmeric and coriander seeds for 1 minute. once the oil is absorbed, add the quartered tomatoes and 80ml water. leave to simmer on a medium/high heat for 15 minutes whilst gradually adding the remaining water until the mixture has reduced and the tomatoes are soft and saucy. take the eggplants out of the oven and carefully scoop out the flesh, leaving the skin intact. roughly chop the flesh and add this to the tomato mixture. cook for a further 5 minutes and then add the chopped coriander. spoon the filling into the eggplant skins and either serve as they are or finely grate some cheese over the top and return to the oven until melted.

23.01.2022 one of my environmental resolutions is to try and not buy any new clothes (undies excluded). Im actually pretty good with this already - except for when an event is coming up as I use that as an reason to buy something new. but now I have a lot of pretty things Ive only rocked once or twice that I can totally wear again. to freshen up a wardrobe I love a clothes swap, and weve done this a few times now with the teachers at stretch yoga. its great especially if you cant be bothered selling your old clothes. contact some pals, plan a date, sort through your wardrobe and get swapping. theres also lots of groups on facebook with meet ups too

22.01.2022 I'm trying to make some more fun salads so gave this warm pear & spinach salad a go from Honestly Healthy. it's supposed to be with figs but as they aren't in season I used pear instead ingredients: red onion, sliced 60g green beans, sliced... 1 tbsp sunflower oil 1 tsp apple cider vinegar 1 pear or 3 figs 2 tbsp water 80g spinach 5g parsley 30g pistachios, chopped method: saute the onions and beans in a mixture of sunflower oil & apple cider vinegar for 2 minutes. slice the pear/figs in half and put them cut side down in the pan among with the onions and beans and cook for 1 minute on each side. after you flip them, add the water and leave for another minute. serve on a bed of spinach leaves and garnish with the parsley and pistachios.



22.01.2022 me and em's new pasta recipe we're obsessed with: spaghetti with pistachio, chilli and lemon from @meerasodha. it's so easy and so tasty! we supplement some of the basil with spinach instead to make it a bit cheaper. ingredients: salt 100g fresh basil, leaves picked... 1 garlic clove, peeled 100g pistachios 2 red bird’s eye chillies zest and juice of 1 lemon 80ml olive oil 400g spaghetti method: put a large pan of water on to boil and add two teaspoons of salt for every litre of water. in the meantime, finely chop the basil, and do the same with the garlic, pistachios and chilli. run the knife repeatedly over all the chopped ingredients, until they’re very, very fine, then transfer to a large bowl. add the lemon zest, three tablespoons of lemon juice, the olive oil (if you like, use a little more, to loosen the sauce) and half a teaspoon of salt (or to taste), and mix well. cook the pasta in the boiling water for seven minutes (or according to packet instructions), until al dente. scoop out 100ml or so of the pasta water with a ladle, then drain the pasta. add the cooked pasta to the pesto bowl, toss to coat thoroughly, adding a little pasta water, if necessary, to loosen the sauce, then serve.

22.01.2022 a sweet leek carbonara recipe for all you pasta isolation hoarders out there. I got this from jamie olivers veg book. the original recipe is below but to make it vegan I used dairy free butter, vegan cheeze and nutritional yeast instead of eggs. oh and chilli because its not a kristy dish unless it tastes like burning ingredients: 2 leeks 4 cloves of garlic... 4 sprigs fresh thyme 1 knob of butter olive oil 300g spaghetti 50g pecorino cheese 1 large egg method: trim, wash and finely slice the leeks. peel and finely slice garlic and pick the thyme leaves, then place in a large casserole pan on a medium heat with the butter and 1 tablespoon of oil. once sizzling, stir in the leeks and 400ml of water, then cover and simmer gently over a low heat for 40 minutes or until sweet and soft, stirring occasionally. season with sea salt and black pepper. when the leeks are almost done, cook the pasta in a large pain of boiling slated water according to the packet instructions, then drain, reserving a mugful of starchy cooking water. toss the drained pasta into the leek pan, then remove from the heat and wait 2 minutes for the pan to cool slightly while you finely grate the cheese and beat it with the egg. loosen the egg mixture with a splash of reserved cooking water, then pour over the pasta, tossing vigorously. season to perfection and adjust the consistency with the extra cooking water if needed

21.01.2022 garlic & chilli "prawns" I gave PlantAsia prawns a go. the texture was interesting but after a few bites I really got into it. I used their recipe on the back of the packet and added onion (pan-fried), a bunch of broccolini and served it with udon noodles. ingredients: 1 packet plantasia prawns... 2 tbsp vegetable oil 1 tbsp brown sugar 1 tsp garlic paste, or 2-3 garlic cloves tsp chilli flakes method: mix prawns, chilli flakes, garlic and 1 tablespoon of vegetable oil in a bowl. once seasoned, place prawns into a wok or pan. pan-fry seasoned prawns in remaining oil on medium heat for 2 minutes. add brown sugar and thicken with 1 tablespoon of water until caramelised. serve with noodles, steamed green beans or your favourite vegetables.

21.01.2022 afghan bean curry (lubya) | I love this recipe from The Curious Chickpea because its so easy to make and the only thing you have to chop is the onion and garlic! I added some greek yoghurt on top to add some creaminess to the tomatoes ingredients: 2 tbsp coconut oil 1 tbsp coriander seed... 1 tsp cumin seed 1 x 400g can whole tomatoes 1 small red onion, diced & some reserved for garnish 4 cloves garlic, minced 1 cup vegetable broth 2 x 400g cans kidney beans, rinsed & drained 1 tsp ground black pepper 1 tsp salt coriander for garnish basmati rice to serve method: melt 1 tablespoon of oil in a heavy bottomed pot over medium-low heat. add the coriander and cumin and cook for about a minute or until the aromatic and a shade darker. keep a close eye on them so they dont burn. add the tomatoes and their juices to the pot and mash them a little. cook over medium-low heat, stirring occasionally, for around 7 minutes until they break down and are saucy. transfer to a blender and blend until smooth, making sure to vent. heat the remaining 1 tablespoon of oil to the pot and melt over medium-low heat. add the onion and cook for 5 minutes, stirring occasionally, until softened and starting to turn golden. then add the minced garlic, and continue cooking for an additional 5 minutes, stirring often so it doesnt burn. once the onions are nice and caramelised add the broth, the spiced tomato sauce, kidney beans, salt and pepper. simmer uncovered on low heat for about 15 minutes. adjust seasonings to taste. garnish with coriander and minced red onion and serve with basmati rice.

19.01.2022 I tried another recipe from jamie olivers veg. the recipe says to use sweet potato but I had lots of carrots in the fridge so I roasted them instead (they only needed about 45 minutes in the oven). the recipe also says to use a muffin tray to bake the tortillas, but if you dont have a muffin tray Old El Paso Australia have standnstuff tortillas which are super easy. I also added some mexican rice and refried beans into mine! ingredients: 1 sweet potato (or whatever veg ...you like) 1 tsp smoked paprika 2 limes 1 ripe tomato red onion 4 sprigs fresh mint apple red chilli 1 large flour tortilla method: preheat the oven to 180c. scrub the sweet potato, dust with smoked paprika and roast for 1 hour or until tender. squeeze the lime juice into a bowl. chop the tomato, onion, mint leaves, apple & chilli and stir into the bowl. pinch off and reserve the sweet potato skin. tear the tortilla into quarters, then rack up between the domes of an upside down muffin tray. bake for 10 minutes or until golden and crisp, tearing the sweet potato skin on to the tray for the last 5 minutes. mash the sweet potato and season to taste with sea salt & black pepper then divide between the tortillas, topping with the apple & chilli salsa & crispy sweet potato skin

19.01.2022 it didn't really hit me until a couple of days ago when class numbers started to go down and classes starting to be cancelled that teaching is my income. it is an unsettling and tough time for everyone and especially independent contractors and small businesses. I understand that people want to suspend their memberships immediately and have notice periods waived, but I urge you to think of these studios and how much that one extra payment can help for them to make it through ...this time and still exist at the end. I also want to thank the studio owners who are doing everything they can to keep classes running so that we have work. for my classes that are still running I won't be using props and will stay teaching from the mat. everything is cleaned meticulously but please feel free to bring your own mat and props and know that you do not have to use any props. I never noticed how much I like to physically adjust you all, so that has stopped too! in this high stress time, coming to yoga will help give your mind a break from obsessing over the things that are happening right now. but I understand the importance social distancing, so please do what you think is best. . 17.01.2022 I'm teaching classes online with Zama Yoga & Pilates. Here's a 30 minute barre class you can do using a bench or chair as your barre

17.01.2022 there’s something about pumpkin soup that’s so comforting. you can use butternut squash too if pumpkin isn’t available. recipe from Honestly Healthy soup ingredients 2 tbsp coconut oil red onion, sliced... 1 clove garlic, sliced 10g ginger, sliced 500ml water tsp coriander seeds 450g pumpkin, chopped tsp himalayan pink salt tahini swirl ingredients 1 tbsp tahini pinch of ground cumin juice of lemon 1 tbsp water pinch himalayan salt method heat the coconut oil in a pan and sauté the onion, garlic and ginger. leave to simmer on medium heat for 1 minute. once the oil starts to be absorbed add 4 tablespoons of the water along with the coriander seeds and continue to cook for another minute. add the remaining water, pumpkin and salt. allow to simmer on medium heat for 20 minutes. meanwhile, combine all the ingredients for the tahini swirl in a bowl. transfer the contents of the pan to a blender, whizz until very smooth and split between 2 bowls. swirl a spoonful of the tahini mixture over the top and sprinkle with a few coriander seeds.

16.01.2022 I love me some palak paneer & found this vegan alternative with tofu from the Minimalist Baker. you can make it in 30 minutes! ingredients: 425g block firm tofu 3 tsp curry powder... 15 ml coconut aminos tsp sea salt 2 tsp nutritional yeast 170 g loosely packed fresh spinach 40 ml avocado or coconut oil 1 tsp cumin seed or ground cumin 15 g minced ginger 1 medium diced white onion 1 chilli (serrano or jalapeno) 180 g can diced tomatoes 4 cloves garlic 60-120 ml vegetable broth or water 2 tsp curry powder 1 tsp garam masala 60 ml full fat coconut milk method: preheat oven to 220c. drain, pat dry then cube the tofu. in a bowl season tofu with 1 tsp curry powder, coconut aminos, sea salt, & nutritional yeast. heat a medium sized pan on medium heat (if using stainless steel add a little oil so it doesnt stick). add tofu & saut 3-4 minutes, or until a couple of sides are browned. transfer to oven & bake for 15 minutes. if you prefer firmer tofu, bake longer. if you want softer tofu that mocks paneer, bake less. set aside to rest in the pan. meanwhile, boil water in a large pot halfway full. heat a large pan over medium heat. add half the oil, cumin seed, ginger, onion & chilli. saut for about 5 minutes until onion is soft & translucent. add diced tomatoes & garlic. saut 3-4 minutes or until tomato has softened. add spinach to boiling water & cook 2 minutes. strain & rinse with cold water. drain well. add tomato mixture, spinach & vegetable broth or water to a blender & blend into a smooth sauce. add more broth or water if necessary. heat the same same pan over medium heat. add remaining oil, curry powder & garam masala & cook for 30 seconds. add the spinach sauce & cook the mixture over medium-low heat for about 3-4 minutes to deepen the flavours. if it bubbles too much, lower heat to a simmer. add coconut milk and stir. taste and adjust flavour as needed, adding salt or coconut aminos to deepen the flavour and curry powder for more rich curry flavour.

I like the idea because teaching yoga means tight yoga pants so feeling bulky never feels cute, but these didn't work too well for me. they weren't super absorbent so I had to wear my period undies with them but in saying that I bought the regular size and not heavy. changing them was fine at home because I could rinse out straight away, but when I had a full day at the studio and pulled it out I was like uhh what do I do because I didn't have anything to place it in. also, is it too much in a public restroom to wash or empty out reusable sanitary items? I'm not comfortable with it personally but I would understand if a woman chose to do it

14.01.2022 it hadn’t crossed my mind about the plastic bag when buying bread before until I saw this reusable bread bag from Onya. there’s something nice about going to the bakery and choosing your loaf of bread and getting it sliced. the bag is made from recycled plastic bottles. you don’t need a plastic tie, all you do is roll the bag down and use the clips to keep it fresh. it’s also fine to put in the freezer

12.01.2022 fabric softener always seems like a luxury but it makes your clothes smell and feel so good. this diy recipe is from Low Tox Life yummy-smelling fabric softener: ingredients... 20-30 drops essential oil of your choice 2 cups epsom salts cup bicarbonate of soda method simply mix the essential oil into the epsom salts, then mix in the bicarbonate of soda. keep in a jar. about halfway through wash (or from the beginning) add cup of your mixture

12.01.2022 I made this yummy lavender & lemon lip scrub for a birthday gift. obviously had to make one for me to have to. I got the recipe from Diy Natural ingredients 1 tsp jojoba oil tbs honey 1 drop lemon essential oil... 1 drop lavender essential oil 1 tbs organic cane sugar method start by mixing jojoba oil and honey in a small bowl add in lemon & lavender essential oil slowly stir in sugar until mixture reaches desired consistency. if you like a harder scrub use more sugar store in a lip balm tin {I got this one from Biome Eco Stores}

11.01.2022 the best way to get things done is to simply begin I have so many diaries from when I was in school. my favourite entry to this day was: dear diary, today I found out I need braces. NOOOOOOOOOOOOO. with my glasses too, Ill look so ugly (oh young kristy). yesterday I noticed that I was resisting to write. I was coming up with all these excuses and realised I was resisting because I didnt want to be honest with myself. I didnt want to write down the crappy feelings I ha...d for the first day of the year. the new year is all about being fresh and optimistic and I was hungover and had a little bit of PPD (post party depression). but as I started to write it was therapeutic as it made me really think about why I was feeling what I was. it then led to me calling mitch and having such an honest conversation which left us both feeling really great and how to approach a similar situation. journaling allows you to explore, to have an honest conversation with yourself, and help figure out what really matters and is important to you. journaling doesnt have to be an elaborate thing. all you need is some pen and paper and a couple of sentences. for me Im writing one thing Im grateful for, my mood and try to unravel why, and in the calendar part and big highlights. the hardest part is just starting the habit but can you stack it on something else like when youre having your morning coffee? Ive taught over 2000 hours of this marvellous thing we call yoga when I stepped into teacher training my thinking was that I could teach maybe once a week, but yoga is all I have done ever since. I am super grateful to be able to do this, and for all the teachers who have taught me, and to all my fellow teachers and friends who keep inspiring me. and most of all so ridiculously thankful for everyone whos taken the time to come to one of my classes and practice with me

11.01.2022 what do you do with overripe bananas? banana bread of course this recipe is from Eat This My Friend. simple and delicious! ingredients: 4 medium overripe bananas ... 1 cups plain flour (mixture of wholemeal and white) 1.5 tsp baking powder tsp baking soda pinch of salt cup raw caster sugar cup coconut oil, melted 1 tsp vanilla concentrate 1/2 cup chopped medjool dates method: 1. preheat your oven to 180c. 2. place the overripe bananas into a mixing bowl & beat until pureed. add the vanilla, coconut oil & sugar, & beat again until combined. 3. fold in the flour, raising agents & salt until thoroughly combined. 4. fold in the chopped medjool dates & pour the batter into a loaf tin lined with baking paper. 5. bake for 45 mins to an hour, or until skewer comes out clean. 6. store at room temperature. it keeps for quite a few days, and is even better after some time in the toaster.

11.01.2022 afghan bean curry (lubya) | I love this recipe from The Curious Chickpea because it's so easy to make and the only thing you have to chop is the onion and garlic! I added some greek yoghurt on top to add some creaminess to the tomatoes ingredients: 2 tbsp coconut oil 1 tbsp coriander seed... 1 tsp cumin seed 1 x 400g can whole tomatoes 1 small red onion, diced & some reserved for garnish 4 cloves garlic, minced 1 cup vegetable broth 2 x 400g cans kidney beans, rinsed & drained 1 tsp ground black pepper 1 tsp salt coriander for garnish basmati rice to serve method: melt 1 tablespoon of oil in a heavy bottomed pot over medium-low heat. add the coriander and cumin and cook for about a minute or until the aromatic and a shade darker. keep a close eye on them so they don't burn. add the tomatoes and their juices to the pot and mash them a little. cook over medium-low heat, stirring occasionally, for around 7 minutes until they break down and are saucy. transfer to a blender and blend until smooth, making sure to vent. heat the remaining 1 tablespoon of oil to the pot and melt over medium-low heat. add the onion and cook for 5 minutes, stirring occasionally, until softened and starting to turn golden. then add the minced garlic, and continue cooking for an additional 5 minutes, stirring often so it doesn't burn. once the onions are nice and caramelised add the broth, the spiced tomato sauce, kidney beans, salt and pepper. simmer uncovered on low heat for about 15 minutes. adjust seasonings to taste. garnish with coriander and minced red onion and serve with basmati rice.

09.01.2022 I was making a salad and it had marinated mushrooms, so I found this recipe from @damn_delicious that can be made in 10 minutes. Ive been adding them as a little extra something something to all my food this week easy marinated mushrooms ingredients: 500g mushrooms 1/4 cup olive oil... 1/4 cup white wine vinegar 1/4 cup diced red onion 2 cloves garlic, minced 2 teaspoons brown sugar 1/2 teaspoon dried oregano 1/2 teaspoon whole black peppercorns 1/4 teaspoon crushed red pepper flakes 1 bay leaf salt and ground black pepper, to taste method: in a large pot of boiling salted water, cook mushrooms just until tender, about 3-4 minutes and drain well. in a large bowl, combine mushrooms, olive oil, vinegar, red onion, garlic, sugar, oregano, peppercorns, red pepper flakes and bay leaf; season with salt and pepper, to taste. transfer to an airtight container and place in the refrigerator for at least 8 hours and up to 5 days.

07.01.2022 let's talk period undies. there are more eco choices like organic cotton when it comes to pads and tampons but there's still that issue of waste. when I first heard about period undies I thought they were going to be real daggy and bulky looking, but the designs are actually super cute. I got a pack from Modibodi which came with two undies and a menstrual cup. I felt comfortable all day and didn't feel like I was swimming in blood (I'd like to point out that I am super lucky with light periods that last like 3 days) but they've got five different absorbencies so you should be able to find a pair that suit you. I was a bit worried about smell too but just chuck them in the wash on a gentle cycle and they're good to go and if there is a bit of smell add some vinegar

I got this recipe from Diy Natural and the items from Biome Eco Stores. 03.01.2022 it didnt really hit me until a couple of days ago when class numbers started to go down and classes starting to be cancelled that teaching is my income. it is an unsettling and tough time for everyone and especially independent contractors and small businesses. I understand that people want to suspend their memberships immediately and have notice periods waived, but I urge you to think of these studios and how much that one extra payment can help for them to make it through ...this time and still exist at the end. I also want to thank the studio owners who are doing everything they can to keep classes running so that we have work. for my classes that are still running I wont be using props and will stay teaching from the mat. everything is cleaned meticulously but please feel free to bring your own mat and props and know that you do not have to use any props. I never noticed how much I like to physically adjust you all, so that has stopped too! in this high stress time, coming to yoga will help give your mind a break from obsessing over the things that are happening right now. but I understand the importance social distancing, so please do what you think is best. . 01.01.2022 I tried another recipe from jamie oliver's veg. the recipe says to use sweet potato but I had lots of carrots in the fridge so I roasted them instead (they only needed about 45 minutes in the oven). the recipe also says to use a muffin tray to bake the tortillas, but if you don't have a muffin tray Old El Paso Australia have stand'n'stuff tortillas which are super easy. I also added some mexican rice and refried beans into mine! ingredients: 1 sweet potato (or whatever veg ...you like) 1 tsp smoked paprika 2 limes 1 ripe tomato red onion 4 sprigs fresh mint apple red chilli 1 large flour tortilla method: preheat the oven to 180c. scrub the sweet potato, dust with smoked paprika and roast for 1 hour or until tender. squeeze the lime juice into a bowl. chop the tomato, onion, mint leaves, apple & chilli and stir into the bowl. pinch off and reserve the sweet potato skin. tear the tortilla into quarters, then rack up between the domes of an upside down muffin tray. bake for 10 minutes or until golden and crisp, tearing the sweet potato skin on to the tray for the last 5 minutes. mash the sweet potato and season to taste with sea salt & black pepper then divide between the tortillas, topping with the apple & chilli salsa & crispy sweet potato skin

I used 'the best damn vegan nachos' recipe from Minimalist Baker. the cashew-less queso is delicious and a nice break from using nuts all the time. 01.01.2022 so when you make nut milk you get the leftover pulp which is too expensive to just chuck out. what you can do is make some bliss balls out of them. this recipe is inspired by Vibrant Plate ingredients 1 cup leftover almond pulp ... 1 cup soft dates cup psyllium husk 2 tsp cacao 1 tsp melted coconut oil 1 segment of orange pinch of salt 2 tsp cinnamon method 1. pulse together almond pulp & dates in a food processor to break the ingredients apart. 2. add psyllium husk, cacao, coconut oil, orange, and salt. blend in food processor until thoroughly combined and you get a sticky blended mixture that will hold together. 3. remove the dough from the food processor and add to a bowl. take a pinch of dough, press together and then roll into a small ball. place on a plate and repeat to use up all the mixture. 4. on a separate plate sprinkle the cinnamon and roll the balls to coat. 5. store in fridge in an airtight container for up to a week.
