01.01.2022 A while ago Aisling and myself had the pleasure of visiting an extraordinary woman named Cora, Michael John Holes mother. We spent a few days together as this... dynamo of a woman cooked up an absolute storm of traditional country foods. This cant be overstated, she was a very senior country woman but Cora was a true force of nature. It is hard to believe she has just now passed, there was something to her that had you believe in some form of invincibility, that she would be the last one standing in whatever endeavour she took on, its sad, very sad to hear of her passing, but lets celebrate her strength, her successes and her good nature. We were lucky to have spent time with her, (and Michael and Jacob), we remember it well and just how incredibly she threw herself at the task of preparing a swag of beautiful but very honest food for us to capture. Here are a few shots from the assignment, from our time with Cora in Edenhope. All the food was genuinely as delicious as it looks, it was all made with great skill and it was all made from the heart.
