Even though it sounds like a joke, 60 years ago a mechanism was created to allow Parmigiano producers to use the rounds of Parmigiano, during the standard 24 months of seasoning, as collateral for the loans that they need to regularly ask banks to assure their production. Today banks have real, secured vaults where they can store up to 432 thousand rounds of Parmigiano, for a value of more than 190 million of euros.

07.01.2022 The International Week of the Italian Cuisine DID YOU KNOW THATIn 1830 an Italian chef Raffaele Esposito created a pizza in honour of Queen Margherita during her visit in Naples. The chef prepared 3 different pizza and one was inspired by the colours of the Italian flag (green, white and red). He used mozzarella, tomato and basil as ingredients. Thanks to the huge success of that occasion, the pizza took the name of the queen.
