07.01.2022 Our & drizzled with a deliciously rich miso truffle butter and mixed mushrooms. Where has this combination been all my life? Recipe below. Try it out this weekend!... Makes enough for 20 dumplings : 1 pack Hakka Chicken & Mushroom Dumplings 20g Miso paste 10g Porcini or shiitake mushrooms 250mL Boiling water 200g Enoki mushrooms (separated) 1/4 piece Eschallot (diced finely) 100g Unsalted Butter 1/4 bunch Chives (chopped roughly) 8ml Truffle oil ! 1. Place porcini or shiitake mushrooms and miso paste in 250ml boiling water and stir well till paste is dissolved. 2. Lightly saute enoki mushrooms and escallot in 20g butter. Set aside. 3. Place remaining butter in pan and brown. (Tip: A white or silver bottomed pan is best to actually see the butter browning!) 4. Add mushroom & miso liquid to browned butter and bring to boil. 5. Add enoki mushrooms to warm through. 6. Drop dumplings into boiling water and cook on high heat. When water comes to the boil again, pour in a cup of cold water to prevent over cooking. Turn heat down & simmer until dumplings float to the top. Simmer for 2-3 more minutes then strain and remove from pot. 7. Divide sauce & mushrooms between dumplings. 8. Lightly drizzle with truffle oil and garnish with chopped chives.
