21.01.2022 AND HERE'S WHY ... It's been a long time coming ... I've tried to avoid it ... accommodate this as best I can. But desperate times require desperate measures, right? I'm tired of being tired. I'm sick of being sick. I'm weary from insomnia. I'm frustrated by not being able to train as hard as I'd like. I miss my old healthy life ... Autoimmune conditions, like Sjögrens, suck the life out of you. They make you irritable, anxious, unreliable and depressed ...... It's difficult to get back into shape. The constant downward spiral forces you to take comfort in food, alcohol and substances which aren't supportive of your health. And it's hard to climb out of those depths. I'm on a constant search to find a solution ... something ... anything that will work for me. I've learned that diet plays a massive part in my disease. 4 years ago I went paleo. 12 months I upped the anti, going flexitarian-paleo. But lying in bed yesterday afternoon, wallowing in a plethora of joint pain, I came across the reasons for making yet another change ... "The Game Changers" (2018, Netflix) starring @lightningwilks is an interesting documentary on the benefits of going plant-based. And what was of particular interest to me were all the anti-inflammatory benefits. But plant-based alone doesn't take it far enough ... not for me. And if I'm going to test this on myself for 60 days, then I'm going to test it right. You know those Venn diagrams you learned at school? They're about to come in handy ... you see plant-based paleo is not just plant- based and it's not just paleo. It's the bit in the middle where the two circles intersect. So no meat. No legumes or soy. No dairy. No sugars. No grains. Everything from scratch. So this morning I had my blood tests done to set the baseline for this 60 day trial. And I'm really looking forward to seeing the results. INGREDIENTS: 80g of cooked BBQ Chicken Breast (no oil) 200g zucchini, spiralised 100g Italian tomato passata A pinch of pink salt and Stevia Slim to taste Corriander or basil to garnish METHOD: 1. In a non stick pot put the zoodles and passata and cook until wilted (but not mushy). Add a little water if necessary. 2. Warm the cooked chicken for 30 seconds in Microwave on high. 3. I was relieved to hear that I had an unusual staphylococcus infection at the base of my lungs which probably originates from my sinusitis. Relieved because it means there's a solution to some of my chronic issues I was also not surprised to hear that the strain (who I'm calling Steve the Staph) is resistant to the Emicin antibiotics they'd been prescribing me *doh!* It explains completely why I've been getting sicker and sicker for the past 27 months So 18 hours later on the right meds and I'm feeling better than I have in months There's still a long way to go but watch out world ... 16.01.2022 I HATED avocados growing up. But since being diagnosed with an auto-immune condition I've learned not only to love the humble avo, but how beneficial they are in my daily diet. There's not a day that goes by where there isn't an avocado chillin' in my fridge, ripening in my fruit bowl or hangin' out on my plate. I urge you not to diss the modest little avocado, don't shun it because of its pricetag (which is worth every cent). Don't avoid this berry because you don't know how... to get it out of its skin in one piece, or because you can't remove its giant nut (which is actually a seed) ... 13.01.2022 Cardamom Plums with vanilla ricotta Beautifully cooling and nothing scratchy for my sore throat Here's how:... 1. Get a 8 large organic (tree ripened) plums, wash and dry them and cut them in half, removing the stone 2. In a pot add half a bottle of wine (I used Shiraz), 5 bruised cardamom pods, half tspn vanilla bean powder @professionalwhey and SteviaSlim granules @nirvanahealthproducts to taste. Stir well. 3. 10.01.2022 I'm all about ZERO waste Cauliflower and celery soup with crushed pistachios and white truffle oil So you know that end you cut off the celery, and the leaves and stalks off your cauliflower? You don't throw them away ... DO YOU?... If you do I know it's not because you want to add to the abundance of waste on this planet ... it's because you don't know what to do with them, right? Here's the answer ... my simple #4ingredient soup 1. Chop 120g cauliflower stalk and leaves, 50g celery bulb and 30g chopped brown onion 2. Place ingredients in a pot with 200ml of bone broth and simmer until cooked. For a richer taste you could sauté the onion in coconut oil first until caramelized 3. Once cooked, blitz with in a food processor or with a hand blender until smooth. Note: I cook and blitz in my Thermomix in Australia 4. Season to taste, plate up and top with chopped pistachios and drizzle a couple of teaspoons of white truffle oil over the top (or olive oil if you're not into truffles). Dip your raw prawns in a beaten egg and then crumb with hulled hemp seeds 2. Chop half a brown onion and a bunch of choy sum. Grate some fresh ginger 3. Heat 2 pans and pop a little coconut oil in them 4. In one pan fry off your hemp seed prawns until cooked and golden. Set aside to drain 5. Not your usual #lettucetacos So I've been #slowcoooking a giant pot of healthy #bolognesesauce (50% grass fed organic ground beef and 50% ground carrots) for 3 days But it's not quite to hubby's palate because I used #erythritol rather than sugar to cut the acid ... my way of eliminating harmful sugars from our diet *sigh*... Even though eurythritol is a sugar alcohol and it's sweet, it has almost zero calories, but more importantly it doesn't spike the blood sugar like other sugars, honey, maple syrup, rice bran syrup, etc. But to some people, like my hubby, it can taste a bit metallic And so yesterday I was in a rush to make lunch for work and rummaged around in the fridge for something quick and this was the result Yep, bolognese lettuce tacos with hemp seeds, pepitas, sunflower seeds and avocado A really weird combination but it kinda worked!
