24.01.2022 I spent the long weekend in the van travelling around Yorke Peninsula And I want to share an easy vegan breakfast tip: I made different flavours of #ChiaPudding in advance without topping and just pop into the fridge in the van then every morning I just top it with any fruits I could find and voila!... easy-healthy-protein packed BREKKIE while travelling . . 17.01.2022 FLUFFY VEGAN PANCAKE I just got back from camping trip and wanted to share easy & delicious breakfast while you are on trip Make your own pancake mix (my recipe below) and then bring a box of plant milk & lemon (this is the key for the fluffy ) Recipe below . . Pancake mix: - 1 cup of flour... - 1 tsp baking powder - 1/2 tsp baking soda - 1/2 tsp cinnamon - pinch of salt Mix the ingredients together and put into a jar. . . When you’re about to make the pancake, squeeze 1/2 of lemon juice, mix it with less than 1 cup of plant milk to substitute ‘buttermilk’. I did not thoroughly measure the milk, it was about instinct . . Then, add the pancake mix into any plate or bowl (whatever you bring to the trip) and pour the ‘buttermilk’. Thoroughly mix it all together and don’t worry about perfection, little lumps are okay . . Pour the batter into the greasy skillet/pan in medium heat. You can use butter or oil to grease your pan. Cook each side. I made 2 big pancakes and 2 medium sized pancakes with this recipe, which was enough for 2 hungry people . . Once it’s all done, top it with any fruits you bring and MAPPLE SYRUP of course or JAM. I finely chopped them and seasoned it with salt, pepper, soy sauce & sesame oil I also used buckwheat noodle for healthier option . . Thanks to @colessupermarkets for their new Coles Asia range! 11.01.2022 Here is one of my favourite GREEN smoothies with cheap and simple ingredients (YES, MORE TO COME ). I used coconut water instead of plant milk Again, protein powder is optional but I recommend to add rolled oats to boost your fibre intake. Lately I have been adding protein powder to my smoothies and I feel GREAT! . . Ingredients: - 2 cups Coconut Water (you can use Plant Milk if you wish )... - 3 tbsp Rolled Oats - Hemp Protein or Protein Powder (optional) - Baby Spinach (I used 2 handful of spinach) - 2 Bananas - 1 cup Mango - Passion Fruit OR Pineapple OR Lemon . . Blend it all together until smooooth and ENJOY Remember, if it is too thick, add more water and less oats. If you use all fresh fruits, add a bit of ice cube . 10.01.2022 Blueberry Peanut Butter Smoothie Perfect for breakfast or dinner replacement if you wish I used my homemade PB I made the other day and it was perfect for light dinner! I also added Açai Powder for extra PURPLE-ISH colour , which I love! . . Ingredients (1 serve): - 1/2 cup Blueberries ... - 1 Banana - 2 tbsp Rolled Oats - 1/2 tbsp Peanut Butter (I prefer natural & no sugar) - 1 1/2 cups Your favourite plant milk (I used Hazelnut) - 1/2 tsp Açai Powder (OPTIONAL) mine is from @unicornsuperfoods - Ice cubes . . Blend it together and serve Mine was quite thick because I added more oats, you can add WATER to yours if you don’t like thick smoothie. Or as simple as eating it alone it is finger lickin’ GOOOOOOOD Many of commercial peanut butter is made with added sugar and TONS of preservatives There are some natural ones but I have decided to make my own . . The ingredient can be as simple as PEANUTS But I use some more ingredients:... - 500 grams Roasted & Unsalted Peanut - Pinch of SALT - 1 tbsp Maple Syrup - 1 tsp organic Coconut OIL You can use food processor or high speed blender (with tamper) to make your peanut butter. Blend it all together. Start with low speed and then quickly turn into the high speed. Quick and easy to make I like to eat my curry with Papadum (crispy Indian cracker) I used @thehappypear recipe of chickpea curry because it is sooo easy and yum (search in Youtube for the video). I added cardamom pods because I just love the aroma Happy cooking . . Ingredients: - 1/2 onion... - 1 clove of garlic - thumb-sized piece of ginger, grated - 1/2 -1 red chili, sliced - 1 tbsp curry powder - 1 tsp cumin powder - 1 tsp ground coriander - 1 tsp ground paprika - 5 cardamom pods - 1 can diced tomatoes - 1 can coconut milk - 1 chickpeas (rinsed and drained the water) - Salt & black pepper, to taste - Coriander (small bunch) - 1/2 of lime juice & zest . . How: - Heat the oil, add onion, garlic, ginger and chili to the pan. Stir until the onion is soft. - Add spices (curry powder, cumin, ground coriander, paprika & cardamom pods) into the pan, stir for 30 secs. - Then put diced tomatoes, chickpeas and coconut milk. Cook until it thickens a little (not watery). - Before turning the heat off, add the lime zest, lime juice, coriander, salt & pepper. 04.01.2022 Blueberry season is HERE! I made blueberry muffin for afternoon tea and it was perfect! One is definitely not enough for me . . I made 6 muffins with this recipe: - 1/2 cup soy milk... - 1/2 tsp Apple Cider Vinegar OR Lemon juice - 1 cup flour - 1 tsp baking powder - 1/2 tsp baking soda - Pinch of salt - 1/4 cup raw sugar - 5 tbsp Canola oil - 1 tsp vanilla extract - Zest of 1/2 lemon - 1 cup blueberries . . 1. Preheat oven to 180 celcius. 2. Mix soy milk and vinegar/lemon juice in small bowl to curdle (this acts like buttermilk). 3. In mixing bowl combine flour, baking powder & soda, salt, sugar, canola oil, vanilla and lemon zest. Stir and add the soymilk mixture. Do not overmix and add the blueberries (gently mix together). 4. Fill each muffin liner (about 3/4 full) and bake for 20 minutes or until the knife inserted in the middle comes out clean. 5.
