I’m recipe testing today for a paleo/keto banana loaf and my family have given me a big thumbs up Eating healthy doesn’t have to mean cutting out all of your favourite comfort foods. With a few adjustments you can pack those old favourites full of whole nutrient dense ingredients. 24.01.2022 Nothing better than the smell of fresh bread baking in the oven, especially on a cold morning. I usually make a loaf of my #grainfree #dairyfree #refinedsugarfree #nutfree bread each weekend. It is the closest thing to traditional bread that I’ve tasted. It’s flexible, moist and not crumbly. The crust is sightly crunchy but soft on the inside. The best thing is, I know exactly what the ingredients are...no sugar, no preservatives, which, if you have coeliac disease like me, is impossible to find commercially. It keeps for 5-7 days in the fridge and can be stored in the freezer. I love serving this bread as toast with smashed avo and poached eggs, it’s perfect for french toast, sandwiches and it’s also delicious served with home made hazelnut spread or fig & chia jam #harvestremedy #wholefoods #foodasmedicine @ Geelong, Victoria

23.01.2022 I have an abundance of lemons at this time of year and I absolutely love them!! They are a good source of folate, potassium and vitamin C, which is well known for it’s antioxidant properties. The polyphenyl antioxidants in lemons assist to improve insulin resistance. I also drink lemon juice each morning as it stimulates and improves the digestive system. Giving our bodies nutritious fuel doesn’t have to be tasteless and boring. Eating cake can be giving our bodies some wond...erful nutritional support. By using nutrient dense ingredients you can have your cake and eat it too, even for breakfast, and know your improving your health. And so, with so many lemons at my fingertips I’ve been working on a couple of nutrient dense, low carb lemon cake recipes. I usually use almond flour when I make cakes as it is a fantastic alternative to wheat flour. It is very low in carbs and has many health benefits. It has a very low glycemic index too which helps to reduce blood sugar levels and reduce insulin resistance. 22.01.2022 In keeping with my super nutritious lunchbox theme, I've posted a picture of Laney's lunchbox today where I included some Italian meatballs, a side salad, some veggie sticks and some strawberries. Planning and prep work is the key ingredient for having the lunchbox packed and ready to go during the school morning rush. As I've mentioned in previous posts, the week before school starts, I prep, cook and freeze the main components of the lunchbox for the term and then put it i...n the fridge the night before I need it to defrost. I also cut up veggie sticks on a Sunday for the week ahead, so that I can just grab and go. Meatballs are a great lunchbox addition. When using good quality meat, veggies, herbs/spices, and an egg they are a great source of protein, good fats and nutrients and are satiating. This means that concentration levels will still be high even at the end of the school/work day. Meatballs packed with veggies, or "hidden goodness", are also a fantastic way to get some nutritious veggies into fussy eaters When preparing my meatballs I mix together 1.5kg of "good quality" mince (beef/lamb/chicken/turkey/pork/a combination), finely diced onions, finely grated carrots and zucchini's, herbs/spices, an egg and seasoning. I then used a small cookie scoop to scoop out the meatballs onto a lined oven tray and bake for 25min at 160C. This makes fifteen serves (4 meatballs each) which I portion into freezer containers and freeze. There are so many variations depending on the meat used and the herbs and spices...Italian, Indian, Mexican, Thai, Greek, Middle Eastern...I sometimes serve with a sauce or a salad. 20.01.2022 No filter necessary for our mini harvest this morning! We love being able to walk around our wild garden each morning and soak in the sunshine, the fresh air and see what we can find. Especially in our current home stay situation, it's a great way to ground and stimulate our calming parasympathetic nervous system.

We’re feeling very humbled and appreciate all of the messages of support and encouragement that we have received over the past week. One of the things that can be challenging when going grain, dairy and refined sugar free, whether it’s because you’re making a lifestyle choice or it may be that you have a health condition that ...is exacerbated by these foods, is the dilemma you may find yourself in when entertaining or attending a party, function or celebration...especially at this time of year! It can be really hard on children in this situation, as it’s not only a feeling of missing out on something everyone else is having, but the social anxiety that can occur and having to explain why you’re not eating what everyone else is eating over and over again. This was actually one of the driving factors behind creating our products and making grain free living easily accessible for anyone to enjoy. 19.01.2022 A great protein option for the school/work lunchbox are some mini chicken skewers. I batch make them, store in the freezer and pull out the night before I need them. I use free range chicken pieces, which can be marinated with any combination of herbs/spices. In this batch I used coconut oil, oregano, lemon rind and salt/pepper. I then threaded the chicken pieces onto full length skewers, cooked on the BBQ and then cut the skewers in half and froze ready for lunches. I made a... quick Tzatziki sauce on the weekend with coconut yoghurt, cucumber salt and pepper. Pesto or tomato sauce would also be another great option. For the fruit and veggies, which are a must at all meals as they contain so many nutrients and antioxidants required for optimal function in the body, I’ve added a Greek salad, some carrot sticks, as Laney loves carrot (and I already had them pre cut in the fridge) and some watermelon. 10.01.2022 Today was a pretty cruisy day in terms of meal prepping. We had leftover smoothie bowl from Monday’s breakfast; I had some almond meal crumbed chicken schnitzels in the freezer that I made a big batch of a couple of weeks ago, which we used in a salad for lunch; and dinner, Chicken Jalfreze, was another batch meal I’d frozen a few serves of couple of weeks ago. The meals were all super quick to assemble and heat. Meal prepping and batch cooking is a great idea to save time d...uring the week, whilst still eating whole foods full of flavour and nutritious goodness to give us the energy we need. 09.01.2022 After over indulging yesterday for our Father’s Day celebrations I decided to be kind to my digestive system today and cold pressed some juice. I used vegetables and herbs and minimal fruit. Cold pressing means that the juice doesn’t oxidise as quickly, so any extra can be stored in the fridge for a couple of days. It is full packed with undamaged nutrients and of course it tastes so fresh! It’s super high in antioxidants and it’s great at reducing inflammation. Being a juic...e, it’s super gentle on my digestive system. It is important when having a juice or smoothie however, to still create a chewing action, as this is an important first step in our digestive process enabling digestive enzymes to be released. 01.01.2022 By the end of the day when it comes time to prepare dinner, sometimes, I just don’t feel like it. It’s really easy then to opt for takeout. In reality though, by the time you order takeout and then pick it up or get it delivered, you would have been able to cook up a quick and most importantly, nutritious meal and save some money as well. This is where prepping comes to the rescue. Doing some weekly veggie prep after your shop means that the meal’s already halfway there. A S...tir fry is a perfect option for a night like this. It’s super quick to come together, especially if the veggies are ready to go, it can be cooked in a matter of minutes. Tonight we threw together a delicious Pepper Beef Stir fry which I think tasted even better than the takeout version. And, It only took 10 minutes! 01.01.2022 It’s Laney’s first day of grade 6 so the last couple of days I have stocked my freezer and fridge with school lunch options to provide heaps of nutrition and energy for the busy school days throughout the term. I always make sure I have some veggies, fruit, some good quality protein and healthy fats and as Laney’s school is nut free, no nuts!...and sometimes I’ll add in a small treat. These foods are full of nutrients, fibre and are filling and won’t give that afternoon energ...y slump or grumpiness that comes with consuming common lunchbox carbohydrates such as bread or sweet treats. I made a batch of homemade condiments such as tomato sauce and mayo (that I can turn into dips) which will keep in the fridge for the next few weeks. Condiments add so much flavour and versatility. I make my own, as store bought condiments tend to be very high in sugar and other preservatives and fillers that disrupt our digestive and immune function. By making my own I know that good quality, whole foods have been used. They’re also super easy and quick to whip up! In today’s lunch I packed a #cleaversorganicmeat hotdog (and unlike regular hotdogs which use poor quality meat and many preservatives) Cleavers’ hotdogs are good quality beef and herbs/spices and that’s it. Instead of bread, there are lettuce leaves to wrap it, some red onion and homemade tomato sauce. I also included some veggie sticks and as we have a nectarine tree bursting with fruit, a nectarine. As a treat for the first day back, I packed a little choc chip cookie. I’ll add some more posts of Laney’s quick and easy nutrition packed lunchboxes over the next week or so.
