24.01.2022 This beetroot, rosemary and walnut salad is a fantastic way to improve your cognitive function with food! Beetroot and rosemary both enhance blood flow to the b...rain, while walnuts are rich in omega 3 DHA, a vital nutrient for brain health. Ingredients: 3 cups mixed salad greens 6 baby beetroots or 2 large beetroots, washed & peeled cup walnuts, lightly toasted, chopped 2 sprigs of rosemary 1 Tbsp red wine or balsamic vinegar 2 Tbsp olive oil 1 tsp Dijon mustard Sea salt and freshly cracked black pepper Method: Drizzle beetroot with olive oil, salt and pepper, then wrap them up in baking paper along with 1 sprig of rosemary. Wrap the baking paper parcel in aluminum foil, place on a baking tray and roast for 30 to 40 minutes at 160C until soft Whisk together the vinegar, olive oil, and Dijon mustard in a small bowl, then season with salt and pepper and add 1 sprig of finely chopped rosemary Cut your baby beetroots in half, or large beetroots into wedges Place your mixed salad leaves on a plate, top with the beetroot and walnuts and then drizzle over the rosemary dressing. Enjoy!

20.01.2022 A literal mountain of garbage that was declared a public disaster is now a community garden blossoming with life! 17,000 people lived here in Medellns Moravia... neighborhood as it grew into a massive garbage dump between 1977 and 1984. The trash quickly piled up as the population increased, a result of Colombias civil war that forced many to flee their homes and build makeshift housing here. Fast forward to today, and the area has been completely transformed into the largest garden in Medelln with more than 50,000 plants! 70% of the dump has been converted so far thanks to a series of gardening projects employing residents. 13.01.2022 Making Seed Balls: for getting things growing in unlikely places - a link to this how-to is below... . Seedball wha? Yep, they are just what they sound like -... a small ball of clay and soil, with seeds inside. NOT for eating, but for planting. Seedballs are incredibly easy to make, and are a rather excellent way to get things growing in areas that don’t usually have much plant growth. . The basic idea of a seedball is that you make it, distribute it to marginal areas which are hard to get the right plants established in (usually because of lack of water) and wait. The beauty of this technique is that the seedballs will sit there, protected by their clay shell, and then, in a large rain event - melt, and germinate (hopefully). This same rain event has hopefully created enough soil moisture for those seeds to establish. . And the kicker is because it’s easy to make a LOT of seedballs at once, the chances of some of them succeeding is pretty high. . We’ve used seedballs to seed very arid zones to native pioneer tree and fodder species with great success. Or, you could use wildflower seeds, or whatever works for where you live. Go have a read. When you are consistently stopping those old routines of mind and body then "nerve cells that no longer fire together, no longer wire together." Awareness of the old self is the key. As you prune away the neurological hardware of the old self, you also no longer signal the same genes in the same way. You are breaking the habit of being you. Once you have become familiar with the old self to the extent that no thought, behavior, and no feeling will cause you to fall unconsciously into previous patterns, you might agree that it would be a good idea to begin to become familiar with the new self. Nettles are rich in vitamins A, C and Bs..., plus potassium, magnesium and iron. They are also depurative, so are great for skin conditions and detoxification, and have anti rheumatic, anti inflammatory and anti allergic effects. Nettles lose their sting once they are thoroughly wilted, dried, cooked or pulverised. They taste a bit like spinach and can be used in much the same way. 01.01.2022 Turmeric is a great anti-inflammatory spice that supports a healthy brain. We all know turmeric is amazing in curries, but did you know it makes delicious desse...rts too? Try this yummy Turmeric Mango Fool recipe for a tasty brain boost today! Ingredients 2 mangoes, peeled and chopped 5cm piece of fresh turmeric, peeled Juice of 1 orange 1 tbsp fine coconut sugar or caster sugar 1 tsp arrowroot 250ml coconut cream, refrigerated 1 tbsp powdered coconut sugar or icing sugar 2 tbsp flaked almonds Method Blend the mango, turmeric, orange juice, coconut/caster sugar and arrowroot until completely smooth. Pour into a small saucepan and bring to the boil, stirring continuously and allow to thicken for 1-2 minutes. Pour into a bowl and press a layer of clingfilm to the surface to stop a skin forming. Chill in the fridge for a few hours, or overnight. Whisk the cold coconut cream and powdered coconut/icing sugar together with an electric whisk for 3-4 minutes until the coconut holds soft peaks. Layer the mango turmeric sauce and coconut cream in small glasses (makes 4). Scatter over almond flakes and chill for another hour before serving. Top with chopped fresh fruit.
