25.01.2022 Its beginning to smell a lot like Christmas. I know its ages away but today is the 1st September. Fruit soaking for Christmas Cake and Pudding.



24.01.2022 I can't believe its 12 months since our India visit. This time last year we were here exploring the oldest spice market. Trying new spices and mango black tea. Organised chaos and a taste sensation. One of which was black salt which I have sourced for my spice range. Its quite sulphurous but delicious on fruit and is excellent added to fruit syrups in summer for an exceptionally refreshing drink on a hot day.

23.01.2022 As spring comes ever closer and a new honey harvest is anticipated this weeks recipe is honey inspired. Recipe of the Week Char Siu Pork... 500 grams of pork. I used shoulder loin but you can use scotch fillet. 1 cup of my fabulous honey 1/2 cup Shaoxing rice wine or dry sherry 1/2 cup of dark soy sauce 3 tablespoons of chinese 5 spice powder 1/2 teaspoon beetroot powder for the red colouring. Red food colouring could also be used. Mix the marinade in a container and massage the marinade into the pork. Leave in the fridge overnight. Preheat oven to approx 160- 180. Place the Pork on a wire rack in a roasting tray filled with a couple of inches of water creating a steam bath. The excess marinade pour off into a sauce pan and reduce until you have a sticky honey glaze. Roast for 20 mins, baste with the reduced glaze and cook for a further 10-20 mins. Rest for 10 minutes before slicing. Serve with special fried rice and all your Chinese favourites. Perfect for a Saturday Night Fakeaway

21.01.2022 Flexitarians are those people who follow a largely plant-based diet but also eat meat and animal byproducts on occasion. 37% of the people purchasing meat alternatives are people who identify as such. This is my last post for this plant based protein trend for this month. Recipe of the week Mulato Chili and Pinto Bean Soup with Herbed Dumplings 4 Tablespoons Olive Oil... 1 white onion, chopped 1 whole red chili 1 mulato dried chili chopped 1 garlic clove, chopped 1 tin chopped tomatoes 3/4 teaspoon salt 3 cups cooked pinto beans, with 1 cup of their cooking broth 6 cups chicken or vegetable broth, divided 1 cup corn masa harina flour 3/4 cup water 2 tablespoons crumbled feta cheese 1 tablespoon chopped corriander leaves 1 tablespoon chopped mint leaves Heat 2 tablespoons of oil in a large soup pot. Add the onion and cook for 5 to 6 minutes until soft. Add the garlic clove and Mulato Chili Chopped and a whole red chili. Cook for another minute. Stir in the tomatoes and 1/2 teaspoon salt and cook for 5 minutes. Add the cooked beans along with 1 cup of their broth, as well as 6 cups of the chicken or vegetable broth. Bring to a boil, reduce heat to medium, cover partially and simmer for 10 minutes. The beans should be completely soft and the broth thick and soupy. Meanwhile, prepare the masa for the dumplings. In a medium bowl, combine the corn masa flour with the water and 1/4 teaspoon salt. Knead together with your hands. The dough will be very coarse and seem dry. Add the remaining 2 tablespoons of oil, crumbled feta, coriander and mint, and mix together until the dough is very soft.minute. Set aside. Working in batches, puree the pinto bean soup with a blender. Roll dumplings to make 1-inch balls, one-by-one, gently drop them into the soup, gently stir cover the pot partially with a lid and simmer gently for 20 more minutes until the dumplings are cooked. through. Serve with chopped coriander and mint. See more

19.01.2022 Recipe of the Week Lamb Goan Xacuti Xacuti (pronounced Shakuti) is a classic Goan dish that is not for the faint hearted. Loads of flavor and quite a fiery curry, absolutely delicious.... 1 Onion 400 Grams Lamb diced Packet of the Home Economist Goan Xacuti Spice Mix 400 ml water 3 Tablespoons of Toasted Desiccated Coconut 4 Small green chilies 1 tomato chopped Brown off the lamb and onion. Mix the spice mix with the water. Add to the pan together with the toasted coconut, green chilies and tomato and simmer for 2 hours. Keep checking to see if more water is necessary. Add as required. Service with Basmati Rice.

18.01.2022 This weeks plant based recipe. Veggie sausages 2 tbsp extra virgin olive oil 100g mixed fresh mushrooms or 30 g dried mushrooms soaked and re-hydrated) sliced... onion finely diced 1 garlic clove, finely chopped 1 tsp smoked paprika 80g oats 400g tin butter beans drained and rinsed 1 tbsp miso paste salt and pepper to taste Method 1. Preheat the oven to 200C/180C Fan/Gas 6. 2. To make the veggie sausages, heat 1 tablespoon of the oil in a large frying pan and fry the mushrooms for 34 minutes, or until lightly browned, stirring regularly. 3. Add the onions and garlic and cook for 12 minutes, or until softened. Sprinkle over the paprika and cook for a few seconds. Add oats and stir and leave to one side for 10 mins. 4. Put the beans in a food processor together with the mushroom onion and oat mix. Add the miso paste. Blend until the mixture comes together to a stiff paste. 5. Divide the mixture into eight even pieces and roll into sausage shapes. 6. Heat oil in a fry pan and cook the sausages for 45 minutes over a medium heat, turning regularly, until browned.

12.01.2022 In line with the plant based protein theme for the month, here is: Recipe of the Week Huevos rancheros... Ingredients 4 x 6 inch tortillas made with Masa Lista Flour 4 eggs (1 per serving) 2 cups cooked rinsed beans ( black bean, pinto, cannellini) 1/2 onion- sliced or diced 2 garlic cloves- minced 2 tomatoes- diced 1 teaspoon cumin 1 tablespoon fresh coriander 1 teaspoon smoked paprika 1/2 teaspoon salt pepper cup tablespoons water Olive oil 1 large Avocado-sliced 2 tablespoons chopped fresh cilantro Fresh Salsa to Serve Instructions Preheat oven to 180 degrees. In a large pan,sauté onion in a little olive oil until tender, about 5 minutes Add garlic, sauté for a minute or two. Add diced tomatoes and cooked rinsed beans, spices, salt and half a cup of water. Add more if its too thick. Simmer on med low for a few minutes, stirring occasionally. Warm the tortillas on a skillet and place the tomato and bean mixture on top with an indent for the egg. Crack egg into the indent and bake for 10-12 minutes. Serve with fresh salsa, avocado and fresh coriander.

10.01.2022 Vada (Black Eyed Pea Fritters). If you like Falafel you are sure to like these crispy donut shaped fritters made from Black Eyed Peas. Ingredients... 2 Cups of Black Eyed Peas soaked overnight. 1/2 tsp. Turmeric 1 Tsps. Garlic Chopped 1 Tsps. Ginger Chopped Tsps. Cumin Fresh Coriander Dried Onions cup Method Drain the peas very well. Add to a processor with all the ingredients and blend until you get the consistency of a falafel. Add water sparingly if required. Shape into round donut shapes and with the end of a wooden spoon make the hole in the center. Place in fridge for 30 mins to firm up before frying. Fry for 6-8 minutes until golden brown. Serve with Roasted tomato, garlic and ginger chutney and Coconut chutney.

04.01.2022 Plant Based Meat Craze You may have seen an upsurge in the supermarkets lately for Plant-based meats. These can be highly processed and contain additives such as extra sugar, salt and fats. The plant-based revolution isnt for everyone. Though sales of plant-based foods grew by 11.3% in 2019, ... Plant protein is a source of protein from plants. This group can include pulses, tofu, nuts, seeds, certain grains and even peas Some examples are chickpeas, lentils, beans (such as black, kidney and adzuki beans) and split peas. Plant-based proteins tend to be lower in calories and fat than animal proteins but higher in fibre and essential nutrients. 03.01.2022 Recipe of the week Hara Bhara Kabab A healthy & delicious Indian vegetarian snack made with spinach, potatoes and green peas. A delicious snack or accompaniment to a meal. The fresh greens and exotic spices create a mouth watering dish. Gluten Free 1 cup of spinach... 1 cup peas 1 cup poatoes boiled, peeled and mashed 3 Green chillies chopped 1 Tbsp. Ginger chopped Fresh coriander leaves chopped 2 tablespoons Chaat masala 1 teaspoon (Available from the Home Economist Spice Range). Salt and black pepper to taste Cornflour cup Add more if necessary to bring mixture together 12 Cashew nuts for garnish Oil for deep-frying Method Blanch spinach leaves in two cups of boiling salted water for a few minutes. Drain, refresh in cold water and squeeze out excess water. Finely chop. Mix spinach, peas and potatoes. Add green chillies, ginger, coriander leaves, chaat masala and salt to taste. Add cornflour for binding. Divide the mixture into twenty-four equal portions. Shape each portion into a ball and then press it between your palms to give it a flat patty shape. Press in 1 cashew nut into the middle of each patty. Deep-fry the pattys for three to four minutes. Drain onto an absorbent paper. Serve hot with a sauce of your choice.
