25.01.2022 Tonight will be the last limited seating dinner service at House, Im really glad we are still here to say this, and glad to have been cooking for you these weeks in spite of all restrictions. Next week we will be back on our usual dinner schedule Tuesday to Saturday, booking are open and will be able to have plenty of seats so you can enjoy your dinner and your night without any pressure of sort! Thanks again to all the people who have been so supportive these weeks and th...at allowed us to keep House doors open! We cant wait to have you all around for dinner again!!



25.01.2022 Passatelli in brodo its a typical dish from Emilia Romagna, and its one of the oldest Italian recipe we know of. The pasta dough is formed with Parmigiano, Breadcrumbs and Eggs and cook directly when dropped in a hot stock. As we are in Australia and we cant be blind in front of the huge Asian influence in the national cousine, we thought of crossing this old Italian recipe with a Japanese Miso Ramen. ... So here it is our Passatelli in Brodo with Miso, Guanciale and all the trimmings, do yourself a favour and share a bowl with your table tonight!

24.01.2022 In the process of Re Opening on Friday 15th, we are adapting our Menu, Spaces and Schedules for the occasion. We will now be able to welcome only ten people at the same time spaced out between Balcony, Dining Room and Bar. As little as it is, It still feels really good to be able to plate some food and to see you enjoying it, living the space and loving the time you spend here.... We are preparing all a lot of new dishes for a menu that will be a touch smaller than it used to be, but surely as delicious! All seats are taken for dinner Friday 15th, and only couple of seats available Saturday Dinner. Mercato will be open from 10am on the 16th, you will also be able to have a seat and join us for lunch and breakfast. Plenty of communications just to basically say that Im really really looking forward to have you around for dinner once again!

24.01.2022 There is something really special in fresh Scallops, some European would even say its holy. We serve them with an egg yolk sauce, black pepper, pancetta and parmigiano, just like a carbonara.. Is it really something ... an Italian would do? You decide! See more

22.01.2022 As their season is slowing down there are not many pumpkins left in the field for this year, last few are sitting on this shelf in @foxandquailfarm shed, waiting to be cooked and served under our Truffle Injected Burrata! As you can see we were so blessed, to be able to use so many different varieties of this beautiful vegetable and of course all of the other beauties growing in the crop. 15.01.2022 It was last year when we started working on these gnocchetti. We were looking to make something flour only, no potatoes, eggs or anything else, at the beginning we used to make them with spelt flour but now we’ve swapped for whole Rye which has a stronger flavour but softer texture and works well with this new sauce. Gnocchetti are cooked in Spanner Crab Bisque with its flesh and some snow peas are added for colour, freshness and crunch, it serves with Kohl Rabi chips and Chili Julienne. A must try!

All jokes aside (they are over sensitive too) I really couldn’t do without them and their serious and respectful approach to what we do and the life we live. With that said, one thing is for sure, In Kangaroo Valley @foxandquailfarm its Cabbage Season! ... So lets cheer for this greatly versatile(and beautiful) Vegetable, which makes great salad when Raw, it lacto-ferment greatly in Sauerkraut, it can be boiled and roasted or stir fried, it goes well In a soup and its even gonna be part of the stuffing for our Vegetarian Home Made Ravioli this week!

03.01.2022 Last weekend we were in Kangaroo Valley to join @foxandquailfarm in the planting of all lot of seedlings, which with time and special care will grow to become the beautiful organic vegetables we use daily in all our dishes at House. Its been a blessing to cooperate with their farm for the last years and Its amazing for me as a chef to be able to follow the growth of the products we use and to know they are so well and naturally taken care of by the amazing Family who runs the operation. @ Kangaroo Valley, New South Wales

Its a traditional bread dumpling from Trentino Alto Adige, an alpine region of north Italy, they are usually made with bread soaked in milk mixed with cheese and spinach or other greens field leaves. We cook them in stock and serve them with butter sauce and lots of cheese. They have been on our menu since the first day and they are one of the most popular choices you can pick in our full VEGETARIAN menu. ... and...did you know that, as well as our regular and vegetarian menu, we are now serving a Full VEGAN carte with plenty of fresh pasta options and much much more!! 02.01.2022 In Italy and consequently in the whole world, we can find over 300 different shapes of Pasta, each type with a particular characteristic, you can find short or long ones, curly, lisce o rigata, made of durum wheat or egg based. Each different shape its linked, and it originate, from a different region in Italy, and its texture its meant to achieve the best bite only when mixed with the right regional products and sauces. Like Linguine with Vongole from Campania or Trofie... al Pesto for Liguria, or Orecchiette With Cime di rape in Puglia. In a way, each region of Italy, and their habitants, have a very strong and unique identity that cant be easily mistaken for another region, and Im sure that if you have spent some time with Italians, even you, can now guess, more or less accurately,if we are from north or south, east or west. Im insisting in regionality and how its all so different but then how and when Did Pasta become a National Symbol and THE stereotype for Italians and Italian food? It didnt happen around the end of 1800, in spite of the birth of the first Pastas factories, in fact When Garibaldi and Artusi used their separate efforts to unify the idea behind Italy, Italians and Italian Food, Pasta was still classified as a poor class food and as the bourgeoisie class was ruling, they were setting the standards and eating pigeons. As Im not an historian I dont have the right knowledge to find the solution to my self-posed dilemma but I think three key factors played a key role into making Pasta an All Italian Flag. The War, the Television and the Emigration towards America and Australia. The great wars flatten up the economical differences In the Italian families, less people could afford pigeons now and so everyone had to start using grains. The television flatten up the cultural differences all over Italy, people from Milano were watching the same shows of the people from Venice and everyone watched and laughed when that comedian from Naples started eating Spaghetti with its bare hands. And Emigration well.. the stereotype was born there.. Pizza, Pasta and Mandolino
