Pork, crackling, ruby grapefruit, black pepper caramel. This dish started its life as a pork belly and green mango salad in my house in Bondi and grew into this great dish. Tuna dropped accidentally in chilli salt meant for chips, dressed with a black pepper caramel originally destined for roast pork and grapefruit added to cut the fat. So many of the great chefs that have worked with me added their twist. And in 2020 with the pressure of post COVID reopening I put it back on the menu.

10.01.2022 Thanks for the memories Cathy. 20 years ago today she ran THAT race, and I'll remember it forever. I had a great position slightly above the starting blocks, I photographed the gun, then just put the camera down and watched as a Mexican wave of noise and flashes followed her around the Olympic stadium. Getting goose bumps just thinking about it!
