19.01.2022 Recipe below With autumn at our door step I put a little bit of sunshine in a pot for winter deliciousness Juicy nashi-pears preserved with hot water bath method.... Sterilize bottles and lids by washing in hot soapy water, rinse and place in a cold oven. Turn the oven to 110C, when temperature is reached turn the oven off and leave the bottles for 10 minutes. Wash under cold water the nashi-pears, discard any bruised one. Here I cut the nashi-pears in half and took away the core as it fit better my bottles but you could leave small one whole or cut in quarters to fit your bottles. Pack fruits into bottles, fill with cold water (leaving a headspace) and to each 2 litres of water add 5g of citric acid or 4 tablespoons of lemon juice (this is to avoid botulism as the nashi-pears are not acid enough) and add 2 tablespoons of sugar. Make sure all the fruits are well packed and there are no air pockets. Closed the bottles. Prepare a stock pot with a ring in the bottom to avoid the bottles to touch the bottom. Place the bottles in the pot and fill with cold water to submerge the bottles and place lid. Turn up the heat to bring the water to a boil, continue boiling for 45 minutes (less or longer depending of the size of the bottles). Turn off the heat, wait for 10 minutes and remove the jars from the water onto a dish towel. Leave them cool at room temperature for 24 hours. Hot compost is a one big pile (at least one cubic meter) of organic matter (grass, manure, straw, cardboard...) that heats up by the microbial activity and kill pathogens and unwanted weeds to become a rich, full of nutrients dark crumbly compost! Once the hot compost pile starts steaming, you will need to check the temperature as you don't want to over cook it and go over 65 degrees Celcius. ... You will need to turn the compost pile every few days. This will help to aerate it and cook it thoroughly! 15.01.2022 Taking the time to walk in the field and observe is an important tool to understand your land. In the 2 first pictures you can see an old fence line where the post holes have been backfield with compost made of goat manure.... and yes, some legumes are growing like creasy ! This is an awesome sight as this area is waterlogged, acid and really poor. You can see in the second pictures plants that are typical of that kind of soil.... This area has been previously graze by cattle and is all bogged... with rest and target grazing with the goats, it is slowly recovering and different grasses start to establish. Next step will be to spread compost goat manure. So fresh and creamy, simply enjoy on a freshly bake slice of sourdough bread... or just eat it by the spoon ( well I always find spoons left in the fridge next to the pot...) This cheese is fermenting for a whole day at room temperature and drain in a cheesecloth for a whole night.
