12.01.2022 I've been really getting into making fresh pasta lately. I never knew it was so much fun! The kneading and rolling through the pasta machine is quite therapeutic. Jeff kindly shared his pasta expertise (I'd only sat on the bench with in hand before watching). This was my first go at lasagna sheets and I'm pretty chuffed at the result. . 10.01.2022 It's the height of fig season which got me inspired. I had a yearning for having a go at fig bread (like banana bread). Iso will do that to you - give you yearnings. Figs are rich in minerals and soluble fibre so highly nourishing for your body but I think a warm out of the oven cake is so good for your emotional self in these isolation times. Agree?... I used dried organic Turkish figs because I had some in the pantry. - no sneaky trip to the market for freah ones Soaked them in hot water for about half an hour before pulping and then used my favorite spices for more flavour - cinnamon, ginger and nutmeg. Turned out pretty good with honey and ricotta butter. 10.01.2022 Coconut would have to be one of my favourite foods. I became obsessed as a little girl when Mum would make Coconut Ice (maybe it was the sugar?). Anyway, the best way to get pure, unprocessed, healthy coconut is to grate your own. We learned this in a cooking class in Sri Lanka. A coconut grater is a must have in our kitchen now! 03.01.2022 A dull day always needs a bright soup. Roasted pumpkin and garlic soup topped with a little greek yoghurt and roasted spiced pepitas. . I found the roasted pepita idea in an old Woman's Weekly cookbook. Love those older cookbooks - so full of simple food ideas. . Pepitas are high in protein, minerals and have plenty of fibre ... . Roasted Spiced Pepitas - add crunch and a burst of flavour to a blended soup or any vege dish. I added a 1/2 teaspoon of chilli flakes, lemon zest and a litte sea salt to a handful of pepitas. Add a dash of olive oil, mix, spread on a tray and roast for about 6 minutes in a medium oven.
