Remove from heat and immediately pour into a jar and let cool completely. Prep: 10min Cook: 5-7min Lamington Bites Ingredients 200g greek yoghurt 2 tbsp Inner Body Boost Healthy Chocolate Mix 1.5 tbsp coconut oil (melted) 1 tbsp rice malt syrup 2-3 tbsp shredded coconut Chocolate Dipping 2-3 tbsp coconut oil 2 heaped tbsp Inner Body Boost Chocolate mix 1/2 cup shredded coconut Method 4. Place yoghurt, Healthy Chocolate Mix, melted coconut oil and rice malt syrup into a mixing bowl and mix together until well combined. 5. Sprinkle the coconut into the bottom of your desired shape silicon moulds (I used a log shaped silicon tray and then cut them into 3 smaller pieces) 6. Spoon the mixture on top of the coconut, place into the freezer for at least 3 hours (depending on the size of your mounds) until frozen solid. To make the Chocolate Dripping 7. When they are frozen, melt coconut oil in a small saucepan, add the Healthy Chocolate Mix and stir over low heat until well combined and comes together. Place coconut in a bowl or on a plate. 8. Depending how big or small you want your bites, (I cut mine into 3 because one log was too big) then dip the plain side or whole bar into the chocolate and then dip it in the coconut making sure to coat the bottom, place onto a plate and return to freezer until set for 1-2 hours. Tip: Place bites into the fridge 1-2 hours prior to eating them to enjoy them a little soft. Prep: 15-20min Set: 3 hours in freezer Serves 9 bites
