23.01.2022 Apparently it's Pi day somewhere I didn't make pie today but i did make these yummy tarts yesterday simply with 'bits and pieces' from the fridge these days it...s hard to fund time to cook anything other than restaurant food but i couldn't resist when I had just a little of everything to use up my favourite answer when the kids were little...whats for dinner? 'bits and pieces' in this case one has left over bechamel fontina parmesan sauteed mushrooms and pork sausage all precooked the other blanched silverbeet sauteed leek bechamel ricotta parmesan egg salt and pepper to taste olive oil pastry yum yum

09.01.2022 International Cheesecake Day apparently Anyone who knows me will tell you that I make a baked ricotta cheesecake that is simply quite delicious I cannot imagine... how many I have baked over 10 years here at the restaurant not to mention the many many more I have baked over the years in my previous life for 3 times longer than that In my restaurant life I have baked them in all different sizes for different occasions and there has been some tweaking going on...I am very partial to tweaking...usually a chocolate biscuit base or a plain digestive biscuit as with most cheesecakes with a little jam but sometimes just to make it more special I have used a delicious chocolate pastry recipe courtesy @tessakiros Many a special story sometimes with a hint of magic or romance has been recounted to me regarding this cheesecake so it does hold a special place in my heart In summary it is a delicious sweet treat loved by many Thank you everyone for your generous compliments @ Ascot Vale, Victoria, Australia
