25.01.2022 One of our firm family favourites for dinner is this lentil bolognese recipe by Quirky Cooking. I didn't think anything could possibly make this recipe any nicer than it already is, but the last couple of times I made it in my pressure cooker and the flavours are even richer and so lovely - the kids insist I make it this way now! I just popped everything into the pressure cooker and cooked for 10 minutes on medium pressure.

22.01.2022 Good morning all! I was sent the link to this TED talk yesterday by someone in one of my classes at college. It talks about how to make stress our friend rather than our enemy, by changing our mindset about stress, and the health benefits that follow. I will admit that I've spent basically all my life in a stress and often anxious state (though since I've started studying naturopathy, I've found that herbal medicine helps me massively in this area) but the idea of changing my mindset about my stress is now extremely appealing after watching this video. I'm sure it will take some time until it feels natural to view my stress as a positive, but this is exciting. Aren't human bodies amazing? Happy Sunday!



20.01.2022 I just made these fruit crumble muesli bars, recipe by Well Nourished. They're delicious! I made a couple of tweaks to make them gluten free though - I used quinoa flakes instead of oats and I also used a mix of 3 different types of gluten free flour to replace the spelt flour. I would probably recommend reducing the sweetener a little as well. This is a great way to use up some over ripe fruit and also a great little snack to pop into kids' lunch boxes. 18.01.2022 I just made a batch of these oat, date and seed bars, recipe from Brenda Janschek Health & Lifestyle. I made a couple of changes - I replaced the spelt flour with buckwheat flour as I dont keep spelt flour, and I halved the dates and sugar to reduce the sugar levels in the recipe. These will make great lunchbox snacks this week!

17.01.2022 Some info below about recycling your soft plastics through a group called RedCycle, which uses your soft plastics (which cannot be thrown into your regular recycling bin) to manufacture recycled plastic materials. I take a bag of my soft plastics into my local Coles supermarket each week to put into the RedCycle recycling bin. Such an easy way to help reduce household waste!

14.01.2022 I spotted this baby capsicum in my front yard this afternoon. It had grown out of our compost! We started composting a couple of years ago as one way to help reduce some waste in our household. Since then, we've had so many beautiful veggies grow out of our compost. Makes it even more rewarding!

14.01.2022 I just couldn’t not share this recipe from Skinnymixers. I just made it for the first time and it’s so good! I used GF pasta and GF flour and it worked really well! Perfect recipe for a cold and windy Brisbane day.

12.01.2022 I wanted to share this beautiful recipe from Eat Drink Paleo for caramelised balsamic chicken and mushroom tray bake that we made recently. We used a whole organic chook that we broke down (much more affordable this way than buying organic chicken fillets at 3 times the price) and doubled the quantity of sauce. We also added a drizzle of honey as we felt the sauce needed a little sweetness to balance out the tartness of the balsamic vinegar. We served this dish with steamed rice and greens. Delicious!

12.01.2022 Homemade kimchi. This one has just gone into the back of my pantry to ferment for a few days. Super easy to make and a great source of probiotics for our gut. Ingredients: 1 medium cabbage, sliced 2 carrots, grated ... 1 sweet potato, grated 3 garlic cloves, peeled and finely chopped 2 tbsp fresh ginger, minced 2 tbsp fresh turmeric, minced 1 green chili and 1 red chilli, sliced thinly Sprinkle of cumin seeds Generous sprinkle of salt (I used around 3 tsp) Method: Combine everything in a large bowl, sprinkle salt over the top and then give it a good toss to distribute the salt. Cover and leave for a couple of hours to allow the salt to draw out the liquid from the veggies. Give everything a good press to ensure that there is lots of liquid (you need the contents of the jar to be submerged in the liquid). Pop everything into a large jar (I recommend jars with the airlocks, like in my pic), press down again to remove air bubbles. Close the jar and pop into the back of the pantry or in dark spot in the laundry or garage for a few days. Taste test after a few days and then store in the fridge. Enjoy!

08.01.2022 Another quick and delicious weeknight dinner, recipe from Jen Shaw - Change Maker. We had this with steamed rice and veggies. Lots of leftovers for tomorrow's lunches for the adults and kids. So yummy!

07.01.2022 Love this article by Katherine Maslen. Summarizes perfectly my thoughts on some of the dangerous advice making the rounds with regards to ingesting essential oils. By all means, I'm all for diffusing them. I also sometimes make topical products with them (but even with that, you need to make sure you get information from reputable sources with regards to dilutions, as these vary for kids and adults, and also many oils aren't safe to be using with kids, and many oils shouldn't be used on skin at all - even in adults). But please don't ingest them!

07.01.2022 I made this delicious Middle Eastern spiced chickpea rice for dinner tonight, using the recipe from Brenda Janschek Health & Lifestyle (recipe link below) and it was delicious! I made a couple of tweaks - I added a couple of diced onions and garlic cloves at the very beginning, and pan fried them until caramelised, before adding anything else, and then I threw in a couple of large handfuls of sliced silverbeet at the end, and allowed it to wilt, and a generous squeeze of fresh lemon juice. 06.01.2022 Super delicious and super easy lentil and veggie stew for dinner tonight. Took next to no time to prepare. I made mine in my pressure cooker but this could just be made on the stove top. Ingredients: 1 onion, peeled and diced 3 cloves of garlic, peeled and crushed... 2 tbsp EVOO 200g red lentils, soaked for a few hours, drained and rinsed Assorted chopped veggies - I used broccoli, carrot, potato, capsicum 300g passata 200ml chicken bone broth 500ml water 2 tbsp veggie stock concentrate Small handful of mixed herbs Splash of balsamic vinegar Sprinkle of dulse flakes Generous sprinkle of pepper Mixed sprouts to garnish Method: Sauté onion and garlic in the olive oil for a few minutes. Add the remaining ingredients and give it a good stir. Cook on medium pressure for 15 minutes. Otherwise cook on low to medium heat on the stove top until the veggies are cooked through and the sauce has thickened a little. Garnish with sprouts. Yum!

06.01.2022 We had gluten free sourdough waffles for brekky this morning - this is what I love about Sunday mornings - being able to put more time into breakfast and making something special! You can see in one of the pics is my fluffy activated sourdough starter which I activated overnight, made with a few different types of gluten free flour I had in my pantry, a sprinkle of chia seeds, and enough water to create a nice thick batter. As always, I keep a couple of tablespoons of the starter aside for next use. Then to the remaining starter, I just added 2 eggs, 1 tsp vanilla powder, 1/2 cup of rapadura, a dash of coconut oil and about 1/2 a cup of chopped mixed nuts, stirred it altogether and cooked in the waffle iron. Yum!
