24.01.2022 One excuse for people not to eat correctly is not enough time and food is too expensive. Instead they turn to little capsules that don't do anything or powders and shakes that no one knows what is in them! Here's an inexpensive and time efficient recipe for something healthy and easy to make: Sweet Potato and Ham Fritters: INGREDIENTS 500g orange sweet potato, peeled, grated 200g shaved leg ham, chopped... 5 green onions, thinly sliced 1/2 cup chopped fresh flat-leaf parsley leaves 1 tablespoon dijon mustard 1/3 cup plain flour 1 large egg, lightly beaten 1 tablespoon olive oil Salad METHOD Step 1 Preheat oven to 170C/150C fan-forced. Place a wire rack over a baking tray lined with baking paper. Step 2 Place potato, ham, onion, parsley, mustard and flour in a large bowl. Stir to combine. Season with pepper. Stir in egg. Step 3 Heat half the oil in a large non-stick frying pan over medium-high heat. Place 1/4 cup mixture into pan, flatten slightly. Repeat to make 4 fritters. Cook for 3 to 4 minutes each side or until cooked through. Transfer fritters to prepared tray. Place in oven to keep warm. Repeat to make a total of 12 fritters.
