13.01.2022 MEET THE TEAM David Wood (aka "Mr Papaya") Director... David joined J E Tipper in 1983 after graduating with a degree in Business (Management) from the Queensland University of Technology. He quickly identified the papaw and papaya industry sectors as key potential growth areas for the company and began to build this part of the business. Today, J E Tipper is Australia’s largest wholesaler of papaws and papayas and the company specialises in tropical and exotic fruit marketing. David has strong family connections to J E Tipper. His father Ernie was the company’s long-serving general manager, having started his career at Tippers in 1950. 12.01.2022 Tropical Twins With the mango season in full swing, it is time to have some fun with tropical fruit!! Papaya and mango are fantastic tropical twins and pair well together in salads, deserts and smoothies. Check out this recipe for EXOTIC PAPAYA AND MANGO CRUMBLE Preparation time: 20 minutes... Cooking Time: 35 minutes Ingredients 5 mL (1 tsp.) vanilla extract 75 mL (1/3 cup) butter, softened 250 mL (1 cup) all-purpose flour 125 mL (1/2 cup) unsweetened grated coconut 1 mango, peeled and cubed (about 500 mL/2 cups) 1/2 papaya, peeled, seeded and cubed (about 500 mL/2 cups) 2 mL (1/2 tsp.) ground star anise 125 mL (1/2 cup) brown sugar 125 mL (1/2 cup) coconut milk 2.5 mL (1/2 tsp.) salt DIRECTIONS Heat oven to 220C (425F). In a 23 cm (9 in.) square baking dish, combine coconut milk, half of brown sugar, as well as star anise, papaya and mango. Set aside. Place grated coconut, flour, butter, remaining brown sugar, vanilla extract and salt in a bowl. Work fat into dry ingredients with fingers until crumbly. Sprinkle mixture over fruit until almost completely covered. Bake in middle of oven for 30 to 35 minutes until topping is golden. Serve with vanilla yogurt if desired and a fresh mint leaf. Papaya and passionfruit are great tr...opical twins and pair well together in deserts and smoothies. Check out this recipe for Papaya and passionfruit fool - great on those hot summer days. Preparation time: 10 minutes Ingredients 1/2 papaya, seeded, peeled, diced 2 passionfruit pulp 300ml carton thickened cream 3/4 cup thick pouring custard 170g tub peach and mango yoghurt 6 meringue nests, lightly crushed5 mL (1 tsp.) vanilla extract Directions Step 1 - Reserve 2 tbsp diced papaya and 1 tbsp passionfruit pulp. Step 2 - In a large bowl, using an electric mixer, beat cream until lightly thickened. Step 3 - Gently fold custard, yoghurt, remaining papaya and passionfruit through cream. Add meringue, stirring until just combined. Step 4 - Spoon mixture evenly between 4 serving glasses. Top with reserved papaya and passionfruit. Papaya and lychee are great tropical twins and pair well together in salads and smoothies. Check out this recipe for Palm heart, papaya and lychee salad - this salad is as tropical as you get, featuring fruits, mint, lime juice and banana blossom.... Preparation time: 20 minutes Ingredients 4 cups shaved fresh palm hearts (use a peeler) 1 cup shaved honeydew melon 1 cup shaved rockmelon 1 cup shredded green papaya 1 cup teenage coconut, sliced into strips 12 lychees, peeled and de-seeded 1 cup mint leaves 1 cup hibiscus petals 1 cup finely sliced banana blossom(the flower of the banana plant, optional) tsp finely sliced red chilli 2 tsp cane sugar 1 tsp good-quality fish sauce 2 limes, juiced Directions 1. Shave, shred and slice all the ingredients shortly before serving. 2. Jannelle has been in the fruit & veggie industry for 34 years, starting at the tender age of 18!! Jannelle began her career in administration and progressed to managing warehouse operations for Moraitis. She then moved over to operations and management of prepacking facilities for approx. 20 years, firstly with Moraitis and then AAA.
