09.01.2022 Johnny Mac’s Cowboy Beans I cook these in the Weber, moving charcoal from direct heat for frying to indirect for the long cook at the end. Recipe:... 2 x chorizo 6 x rashers bacon 500g beef mince (brisket if you have it) 2 medium onions 1 red chilli 1 green capsicum 4 cans of beans (choose whichever you prefer) Johnny Mac’s Bonkers Beef 1/2 cup tomato ketchup 1 1/2 cups your favourite bbq sauce (I used Dorothy’s Dream from Big Boy BBQ) Method: Watch the video Drain beans and place in foil tray Fry off the chorizo and bacon (add to foil tray with beans) Sauté the chopped vegetables (add to tray) then brown the mince seasoned with Bonkers Beef. Add to tray with sauces and mix well. Cook indirect for 2 hours, stirring regularly. Enjoy!
