23.01.2022 So happy to see red love apples available to buy! So pretty. Wherever possible I eat densely coloured fruits and vegetables to maximise my nutritional intake. They taste amazing too!

22.01.2022 I'm really excited to announce that @thealmondfarmer is sponsoring my upcoming cooking demonstration @adelcentralmarket for the @adelaidefoodfringe! Have you ever tried @thealmondfarmer 100% almond butter? It's like no other almond butter I've ever had. Seriously. It's really smooth and creamy. Perfect for adding to curries and other dishes that you'd normally add dairy to. And best of all is low in saturated fat!... Come along on Friday 14 May for a taste!

21.01.2022 Recently I had the pleasure of chatting with Clare from @msunderstoodpodcast. We talked about my journey with MS and how the @overcomingms approach has helped me live well.

20.01.2022 Papaya for breakfast today after a fasted workout. I have come to love this tropical fruit. It's sweet but low in calories while being high in nutrition. Many people call it pawpaw but that's actually a completely different fruit! Do you love it or hate it?

20.01.2022 Sharing food with friends makes us feel connected and contributes to our mental wellbeing. Even better when it's made with whole plant foods because you know it's doing your body good. Arepas with smokey jackfruit, spicy lentils and guacamole is an amazing shared meal!... Want to learn how to make these? Get in touch!

19.01.2022 A beautiful cake for my beautiful Mum.

19.01.2022 New recipe: Plant based chocolate mousse with a vanilla cashew cream. Available on the @shesapiens website. https://www.shesapiens.com//plant-based-chocolate-mousse-/... Link in bio

18.01.2022 As a part of the @adelaidefoodfringe I'll be making this delicious Chana makhani with jackfruit. Warming with a hint of spice and a beautiful creamy texture thanks to the @thealmondfarmer almond butter. Tastings available on the night! Bookings not required. Just show up and grab a seat! Friday 14 May, 6pm... @adelcentralmarket Community Kitchen See more

17.01.2022 Have you ever eaten/taken lion's mane? Can't get fresher than this... Thanks @westsidemushies

15.01.2022 And then there was dessert... Plant-based tiramisu. Gluten and oil free yet completely yummy!

13.01.2022 Simple but delicious buckwheat bread. Recipe: Soak 200g of buckwheat seeds in water for 24 hours.... Drain and rinse buckwheat. Place 40g chia seeds in 350ml water and allow to gel for 20 minutes. Mix buckwheat and chia mix together. Add 1 tablespoon of baking powder. Blend with a stick blender to combine. Bake at 180 degrees C for 45 minutes. Enjoy!

12.01.2022 A mid morning /post workout snack for me. Roasted sweet potato with chocolate nicecream. Who says a whole food plant based diet is boring?

09.01.2022 Cooking an Italian feast with the delightful sisters @moira_elizabeth11 and @weeze_marie tonight. Eggplant parmigiana with cashew moxerella, 'neatballs' in a rich tomato sauce and a green ceasar salad with almond ricotta. All gluten and oil free and using only whole plant foods. So delicious!

09.01.2022 Away on a girls retreat this weekend, we enjoyed this breakfast of delicious smoothie bowls. The base was made with bananas and cocoa, loaded with toppings of choice. Everyone went back for seconds! Does anyone else bring frozen bananas and a @vitamix_aunz on holidays?

06.01.2022 I had the pleasure of chatting with @geoffallix from the #livingwellwithms @overcomingms podcast. We discussed how I was first diagnosed, how I started on the @overcomingms program and many other topics. Listen in and tell me what you thought! Found in the usual podcast places. ... https://overcomingms.org/re/podcast/coffee-break-episode-15

02.01.2022 My first experiment with raw wraps was a success! So tasty and they held together beautifully. They were made with home grown veggies gifted to me by a kind friend who took pity on my non-productive patch! In a high speed blender put 500g zucchini, 1 medium beetroot, 1/2 cup chia or flax seeds, 1 lime, 1 teaspoon garlic powder. Blend until smooth adding enough water to form a thick batter. Spread onto non-stick sheets and place into a dehydrator for about 8 hours at 50C. So good!
