22.01.2022 It’s not the prettiest dish but it was so bloody good!! This afternoon I made ricotta for my dumplings. It takes 15 mins to make and anywhere from 10-60 mins for it to drain (depending how you like your ricotta). I then mixed that with some stale bread (I had multigrain crusts in the freezer which probably attributed to the non-prettiness of this dish, I’m sure white bread would look nicer but it was still amazing).... Then while the sauce was cooking in the mixing bowl I steamed the dumplings on top. So quick! If you sat your ricotta for 10 mins then this would be done in under an hour! The dumplings (pretty much like ricotta gnocchi) were so full of flavour. I also added diced pumpkin to the sauce for some extra veg, spinach would be delish as well. 20.01.2022 Shut the front door! This machine honestly just keeps wowing me. So a little update and bam! We have 2 new functions. Boiling egg function. Speaks for itself. Amazing!... And the warming function. Heating up baby food to a specific temp, or warming leftovers. Handy!

19.01.2022 Tried something a bit different tonight and it was an all round hit with the entire family. This is Boboti (spiced baked mince beef). A dish from South Africa, I’ve never had it before so I don’t know if it turned out as it was supposed to but it was so yum. Bit of a Friday night naughty dish no veges in it, I’d add some carrot and zucchini next time, maybe capsicum too. Or you could do this with tinned lentils which I think would be fantastic. I made the mince base yesterda...y and had a container of the egg and milk custard ready to pour on top and bake for dinner tonight for a quick and easy work night dinner. 18.01.2022 What a day for the Thermy earning its keep 100 times over! Started the day with a batch of pizza dough, then grated some cheese and I already had hidden vege pizza sauce in the freezer and whipped up some pizza scrolls before we went to do groceries. Got home from the park and had chicken and sweetcorn soup ready in 20 mins. With minimal prep time. And it was delicious!!!... Then I made Skinnymixers tuna mornay for tomorrow nights dinner. Lots of hidden veg AND it cooks the pasta in the Thermomix so no other dishes! Just the Thermy and the baking dish I put it in Dinner was from Sam Woods new collection. Sticky chicken So yum! Finally, while Daisy was finishing off throwing her rice all over my freshly vacuumed floor I whipped up some blueberry vegan dream. Just frozen berries and a banana. That’s it! No sugar, no nothing. Made in about 4 minutes and it tastes like soft serve. 18.01.2022 I was so excited to get my Thermoservers and we have used them so much. Tonight I made Sam Woods’ no butter butter chicken. Then I popped it in the Thermoserver to keep warm while I cooked the rice. I love that I can steam my veges perfectly on top of the rice while it’s cooking. All up a delicious and healthy meal prepared in 40 mins with only 10 mins of prep time. 15.01.2022 Shut the front door! This was a bloody good dinner tonight. I can’t take credit for the spring rolls or Gyoza but the seafood pancake and dipping sauce was all me (with a little help from the Thermy ). Recipe called for just prawns but I used marinara mix and some calamari I had in the feeezer and it was still so good! Like, really really good. 15.01.2022 We love our Thermomix accessories almost as much as we love our Thermomix! These skewers are amazing! You just pinch the end and slide the food straight off! And the Thermoserver kept our potatoes warm while Dave cooked the rest on the BBQ. The skewers are coming up in a special deal for October with the Meater+. 14.01.2022 Busy morning in the Martz household! Banana and date loaf for breakfast. This recipe is delicious. I double the dates and omit the honey. And today I ran out of almonds so it’s half almonds and half whole meal flour. Still turned out well. I also bake it in the Mix Shop’s silicone snack bar mould. It’s much easier for Daisy to eat and less mess for me to clean up after her. Chocolate peanut butter protein balls. Do yourself a favour and make these - they are amazing. Now to... try not to eat all of them in one day... Lunch we had Summer Dahl. I went a bit rogue with this recipe, added in stock paste, tomato paste, extra spice and cooked the veges in the Dahl instead of steaming on top and I think mine turned out fabulous! I love Dahl, it is so tasty and red lentils are packed with fibre, protein, folate and iron. Perfect meat free dish! I also managed to make tomorrow nights beef rendang. 11.01.2022 When you’re heading away to an Airbnb with only a teeny kitchenette and a BBQ - make sure you bring along this guy! So handy being able to whip up a delicious pasta dish for dinner. I forgot to take a pic of dinner but you’ll just have to believe me - it is YUM! Cooking the pasta in the sauce made it so thick and creamy. It was like a sun dried tomato flavoured Alfredo pasta, ready in under 30 mins. We were able to cater to my low fodmap mother in law. 10.01.2022 Quick recipe community breakfast this morning. Banana Weetbix Muffins. I replaced the sugar with 50 g dates and the butter with 30 ml rice bran oil and left out the chocolate chips. I cooked some in the Kmart pie maker because they cook in about 7 minutes, compared to 15-20 in the oven. And heaven forbid Daisy had to wait for food - Muuuuuum, tummy soooooooore. ... 08.01.2022 Meatfree night tonight. Doesn’t mean it doesn’t have to be delicious! We had spinach and ricotta Malfatti (kind of like ravioli filling dumplings, with a tomato and pumpkin pasta sauce. Not the prettiest dish (green play doh my loving husband called it ) but it was so yum! Followed by mango sorbet. 07.01.2022 I didn’t take any photos of our Father’s Day spread. Slack! But we were just too keen to start eating. We had a rhubarb and blackberry tart with creme anglaise and full English breakfast popovers with hollandaise. I spent about 15 mins prepping the night before and then a bit of cooking in the morning and that was our feast done! I highly recommend giving these popovers a go. They’re like a Yorkshire pudding filled with sausages, bacon and tomato. You could add mushrooms or h...aloumi to make it vegetarian too. So good!!! 06.01.2022 Cheats pork buns tonight! So delicious and so easy! I use the bun dough recipe from the char siu bao buns but take a shortcut on the filling. The dough takes 5 mins to make (then 30 mins resting). Today I bought pre cooked pulled pork, mixed with with some asian sauces and Chinese 5 spice til I thought it tasted ok and used that for the filling. ... Thumbs up from the whole family tonight. 03.01.2022 Sometimes when I read about recipes and they use terms I’m not familiar with I put off making them. I read a few posts about butter and how you have to wash it. I bought myself a butter bell and it has sat in the cupboard for months. Today I had a tub of cream that was expiring tomorrow so I put my big girl pants on and gave it a crack. Well, 10 whole minutes of work and bam! Butter!!! That’s it. I added some salt because I don’t believe in unsalted butter...and here it is...!!! In my pretty butter bell you keep water in the base and store the butter upside down. It stops it from going off and keeps it at room temperature so it’s spreadable all day, every day. If you want to store it in the fridge you can just add some oil which keeps it spreadable. The byproduct of making butter is pretty awesome as well - buttermilk! Dave and Daisy were pleased as punch with their buttermilk pikelets this morning.
