19.01.2022 Zucchini and Bacon Slice. I added bacon to this slice for extra flavour however it can easily be vegetarian! This is such an easy peasy recipe and am having it for lunches and dinner this week with salad. - 1 zucchini grated - 1 carrot grated - 1 onion chopped... - 3 shortcut bacon rashers sliced - 1 cup tasty shredded cheese - 1 cup flour - 4 mushrooms sliced - 1 cup soy milk - 6 eggs - Salt and pepper - Mix all ingredients together and pour into a lined baking dish and bake at 180 degrees for 30-40 minutes or until set #recipe #healthy #delicious #dietitian #nutrition See more
18.01.2022 15 minute delicious dinner! Honey Soy Soba Noodle and Tofu Salad 1. Baby spinach 2. Soba noodles 3. Blanched carrot and snow peas 4. Pan fried honey soy tofu (2 mins each side)... 5. Dressing with 1 tbsp soy sauce, 2 tsp rice wine vinegar, 3 drops sesame oil, chilli, 1/2 tsp honey and grated ginger 6. Top with peanuts and fried shallots See more
18.01.2022 A perfect winter warmer: Shepherd’s Pie with soft and fluffy cauliflower and potato mash Will be sharing some meals with you all that I’ve made within the last week. Have been embracing some winter faves. What you need: - 400g beef mince (you can easily leave this out for a vegetarian version) - 1 tbsp tomato paste - 1 onion diced... - 1 carrot and zucchini diced - 2 celery sticks diced - 2 tbsp Worcestershire sauce - 500ml stock (I used vegetable) - Drizzle olive oil - 1 bay leaf - 3 potatoes peeled and chopped - 1/4 head cauliflower - 1 tbsp margarine - dash of milk - Sprinkle of cheese - Sprinkle of breadcrumbs What to do: - Drizzle a pan/pot with olive oil and stir fry onion until soft, add mince, sauté and break up until cooked - add in celery, carrot and zucchini and sauté for a couple of minutes - add in your stock, Worcestershire sauce, and tomato paste, season with salt and pepper, add in bay leaf - bring to the boil and turn down to low and leave to simmer for approximately 20 minutes - while this is happening, boil your potato and cauliflower in a pot until really soft, drain and mash with the margarine and a dash of milk - pour your mixture into a baking dish and top with mash, sprinkle over cheese and bread crumbs for that extra crispy top - Bake in a 180 degree oven for about 20 minutes or until your top is brown and crisp - serve with a salad for some extra veges #recipe #nutrition #healthy #health #food #cooking #easyrecipe #winter See more

16.01.2022 Good morning all, this is my Apple, Pear and Blueberry Crumble It’s an oh so yummy dessert that’s quick, easy and definitely guilt free. I have some more winter recipes coming this week so stay tuned!. This makes enough for 2-4 servings however you can easily double it to make more. All you need is: - 2 apples and 1 pear diced (peeled or not, it’s up to you) - 1/2C blueberries (fresh or frozen) - 1 tsp cinnamon... - 1/4C flour - 1.5 tbsp margarine - 1/4C rolled oats What to do: - Boil your apples and pear in a small pot with a dash of water, cinnamon and maple syrup until fruit is soft, add in blueberries at the last minute - Put your mixture into a small baking dish - In a bowl, rub your flour, oats, margarine, and sprinkle of cinnamon together with your fingers until it forms a crumbly mixture (you can add in a little bit of brown sugar if you like) - Sprinkle your crumble mixture over the fruit mixture, place in a 180 degree oven for approx 15-20 minutes or until the crumble is nice and brown - Serve with some yoghurt or whatever you are feeling #crumble #winterwarmer #yummy #recipes #guiltfree #nutrition See more

14.01.2022 Easy peasy Vege Korma Curry with Coconut Rice The perfect mid week (or lock down) meal. - 1 Jar of Korma curry paste - 1 can lite coconut cream or milk - 1 can chickpeas drained and rinsed - 300-400g chopped and peeled pumpkin... - 1 carrot sliced - 2 big handfuls of baby spinach - 1 sliced onion - 1 garlic clove diced - 1 small piece of ginger grated - 2C rice - 3C water + 50mls - 1/4C dessicated coconut How to: - Place the rice, 3C water, a dash of coconut milk and dessicated coconut into a pot, bring to the boil and reduce heat until water is absorbed and rice is soft (approx 10-15 mins) - While the rice is cooking heat a pan with a drizzle of olive oil, when hot add the onion and stir fry until soft - Add curry paste, ginger and garlic and cook for 2 minutes - Add 50ml water, coconut milk, pumpkin and carrot, bring to the boil, reduce heat and cook for about 15 minutes or until pumpkin and carrot is soft - Add the chickpeas and spinach, and pepper to taste - Serve curry with your coconut rice or naan bread if you wish - This makes enough for up to 4-6 serves so it’s perfect for meal prepping, freezing or for a couple of nights #midweekmeal #mealprep #nutrition #recipes #dietitian #healthy #veges #vegetarian #easymeals See more
13.01.2022 Winter warmer alert! Thai Inspired Coconut Pumpkin Soup, perfect for this rainy weather. I used the same flavours as my Thai Red Curry and it turned out so amazing. Those of you who love laksa/Thai flavours (like me) will absolutely love this. Classic pumpkin soup is amazing too but I wanted to try something a little bit different. (Pro tip: if you want EVEN more flavour in your soup, roast the vegetables first, it’s amazing) Give this recipe a try! What you need: - 1kg pumpk...in peeled and diced - 2 potatoes peeled and diced - 2 carrots diced - 2 celery sticks diced - 1 onion chopped - 1/2 jar laksa paste or red curry paste (you can add more to intensify that flavour) - 1 tbsp fish sauce - 1 can lite coconut milk - Salt and pepper to taste - 500ml salt reduced vegetable stock - Squeeze of lime - 1/2 tsp raw sugar - Approx 400ml water How to make it: - Heat up a drizzle of olive oil in a big pot, quickly fry the laksa paste for a minute - Add all vegetables, stock, fish sauce, water and sugar into your pot bring to the boil, reduce heat and allow to simmer for at least 30 minutes or until all veges are soft, season with salt and pepper - Add in coconut milk and use a hand held blender to purée the soup to your desired consistency - Serve with crusty bread and cream, or yoghurt if you wish, and a squeeze of lime #soup #recipe #delicious #thai #dietitian #nutrition #tasty #healthy See more

10.01.2022 Try this yummy little treat that’s perfect for the warmer weather- Dairy Free Mango Raspberry Nice Cream. I’m a sucker for the coconut flavour Got to enjoy this one without worrying about lactose like I normally do with ice cream (If you’re lactose intolerant like me). - Add 2C frozen mango and raspberries to a blender or food processor (this can be done with any frozen fruit of your choice) - Add small amount at a time of lite coconut cream or milk to the fruit and blend ...until you get your desired consistency which should be like a very thick smoothie bowl - Place in to a container and freeze for about 1 hour to get that ice cream consistency, you can top with more berries or some dark choc, yum! - You can also make little popsicles out of this and I’ll show you what it looks like soon! #dessert #nicecream #yummy #summer #lactosefree #vegan #keepcool See more
