01.01.2022 This video is just to show a couple of tricks that help keep out oxygen no matter what fermenter type you use. The CO2 gas layer is not a myth, and most brewers know it’s an important fermentation by-product. We love yeast for their ability to create C02 which can carbonate your beer and protect it from infection or spoilage because it’s heavier than oxygen. We see countless photos of new brewers online who open their fermenters to check in on what’s happening or add hop addi...tions, fruit, juice or wood. This is absolutely fine if the process is clean, fast and oxygen exposure is reduced. Sometimes all it takes to reduce the risk of infection is to add back some C02 to ensure your beverage has a jacket of CO2 resting against the liquid. This is especially important if you are removing the lid of your bucket or gravity fermenters after fermentation has ceased. In the case of dryhopping through the top of your pressure fermenters, a combination of extra headspace, purging and repressurising with CO2 can be a fast and effective way to get the hops in and keep the oxygen out. Having the extra headspace is ideal when depressurising to add hops early in fermentation. Whatever you do, whatever you brew with, keeping oxygen out of your post fermentation processes is crucial to ensuring fresh, bright flavours in your beverage.
