16.01.2022 How I almost ruined my wedding cake. A few weeks ago I stated telling you about how I got into baking and decided to make our wedding cake. To read other posts use #khrustalevastory ... I ended my last post asking for your suggestions on what could have gone wrong with our wedding cake. There were a few good ones like the mousse didn’t set but it wasn’t the case. The problem was with the glaze! Since we were getting married in Lorne (150 km away from Melbourne) I had to make all the parts of the cake in advance and take the frozen cake with us, thinking that I can finish it at the house that we rented for the weekend. I packed all the equipment, ingredients and frozen cake and went to Lorne a day before the wedding. My plan was to finish the cake in the evening: glaze it then decorate and let it defrost over night. And yeah, I forgot to mention that I’ve never made a mirror glaze before but I watched a lot videos of people glazing the cakes and I thought how hard can it be? It turned out to be not that simple. I started with melting the chocolate on a bain-marie and when it reached the right consistency I started draining the hot water and something went really wrong.. I dropped the chocolate into hot water. In case you don’t know - water and chocolate don’t go well together.. So... the wedding is next day, the shops are closed and I don’t have anymore chocolate. The cake won’t look nice without the glaze.. It seems like my wedding cake is ruined.. What a nightmare! Since I had no choice I had to work with my watered down chocolate. The glaze was very thick but I managed to cover the cake with it. Our cake still turned out beautiful and delicious and everyone enjoyed it. It was exactly 4 years ago but I remember it like it was yesterday. We are celebrating our anniversary today

05.01.2022 How to survive Valentine’s Day during a snap lockdown? Pre-lockdown diary: Thursday 4.30 pm: I dropped off chocolate boxes that’s I’ve been working on for the last 2 weeks at Kylie’s @thedessertplateaus for her Valentine’s pop-up store at @melbourne.artisan.collective ... Friday 11 am: I started making a cake for a client, I baked chocolate sponge and made caramel Friday 12.20: the sponge is out of the oven, caramel is cooling down. I have a spare minute and I messaged Kylie asking her to send me photos from the pop-up so I can post them Friday 12.38: Kylie says that there might be a snap lockdown starting from tonight. I don’t really believe it. Friday 13.16 my husband texts me Stage 4 lockdown from 11:59 pm tonight I did not see that coming at all! Now I have to decide what to do with the cake and the chocolates.. I was lucky enough to rearrange a few things quickly. I made a smaller cake for my client and he picked it up before the lockdown on Friday. Some chocolates were sold at the pop-up store and I was going to sell the rest of them online. I also had some cake ingredients left so I made a cake for my husband. (The cake on the photo) At the end of the day I didn’t loose much. But I feel so terrible for other business that were affected by this snap lockdown. All those restaurants that were preparing for the most romantic holiday would have lost a lot of money! Or the florists, or other gift shops.. this whole situation really upsets me I hope that you were able to #supportsmallbusiness and #supportlocal and at least ordered your dinner and bought some flowers. 03.01.2022 A story about a self-taught chocolatier. One of the most popular questions I receive is how and where I learnt to make chocolate. It’s simple - I’m self-taught. It all started with following lots of famous pastry chefs on Instagram and watching their photos and videos of chocolate making process. After watching a number of them I got inspired and thought that I can do it. how hard could it be - you know how confident I am in the kitchen ... Surprisingly, it wasn’t that hard. But I had to read a lot of tutorials because chocolate is a very sensitive product. There are a lot of conditions that you have to follow: from room temperature and chocolate temperature to certain tools and equipment that you need to use. In spite of all these conditions I fell in love with chocolate and the process. 3,5 years later I’m still creating new flavours, experiment with new designs and most definitely enjoy it and proudly call myself a chocolatier.
