And you can’t go ten minutes without checking the phone When your takeaway meals have that same dreary taste As the cardboard they’re wrapped in and are just as nutritious And though time keeps on passing it seems most is a waste Cause the dreams from your youth now just seem fictitious When your soul needs to be cleared of its worries and pains You need to look Westward towards the setting of the sun And get away from the city with its buses and trains Out to the path you must follow the Darling River Run Where the cockys at sunrise with their shrill larikin calls Twist in the vastness of the endless blue sky And the morning light on their wingtips where it falls Seems to glisten and sparkle upon the naked eye And the smell of a campfire with fresh bacon and eggs Cooked in that old oven you got from your dad As you drink tea from a tin cup right down to the dregs Life all of a sudden does not seem all that bad Gone are the worries of that other mad life Time here is just measured by good times and fun Not by pressure and bosses and all of that strife Cause they don’t really matter on the Darling River Run Ron Wilson 2020

So on a dusty outback intersection sad farewells were made to my lovely girlfriend who has a few more months of work out there yet before the wet season. As you can see she is blind Then its been a long day of endless plains and rolling rocky hills. And what is it with qld creeks? Cant youse think of anything else to name them other than 8 mile Creek or 11 mile Creek or 12 mile Creek? And these ant hills! Sesame bread rolls, Caramilk Chocolate coated bread rolls, a damper with cabanosi, charred red and yellow capsicum, chopped kalamata olives, charred cherry tomatoes and topped with Camembert Cheese Bombs. 19.01.2022 Today at the Mackay Expo Pork Belly on pineapple passion fruit and Contreau. A Banana and Raspberry damper with whipped cream, a bunch of cinnamon rolls with rummy dates and a 3 cheese damper made with Gouda, Camembert and mozzarella bombs on top. There was a Blueberry and Camembert damper there somewhere too

17.01.2022 Yet another fantastic day of camp oven cooking at the South Queensland Caravan, Camping, Fishing & 4x4 Expo. Starting with a breakfast damper of Bacon, banana and cheese. Followed by a cook off between myself and Cookie Kim to see who has the prettiest Buns . I have to admit she won with her cheese buns. And for afternoon tea we had a damper with chopped dried apricots, caramilk chocolate bombs, mixed with Stones Green Ginger Wine instead of water and topped with crumbed caramilk chocolate and flaked almonds. Then sliced and served in a cup with custard. Also had another radio interview.

13.01.2022 Great day out. But not many pics but I made a damper this afternoon that had a lovely combination of flavours going on. Its got roasted capsicum and roasted cashew dip smeared thickly then sliced into the batter. Then it was sprinkled with Italian salami, chopped kalamata olives and a thick layer of pizza cheese. It was then rolled up and topped with prosciutto ham and more cheese. Not a video flavour at all. Cleveland Caravan, Camping, Boating & 4x4 Expo

12.01.2022 What a day! Bread and Cheesy Bread and damper and a Banana and Rum and Raspberry Jam Damper with a giant Custard Bomb in the centre. Yeah that was pretty good. Also I took my 8 inch Aussie Oven Co. Aluminium oven for a test drive. And well have a look for your self! Im convinced! Perfect damper, perfect cheesy bread and I didn't use heat beads i just used random chunks of charcoal to make it a bit of a challenge. Nailed it! 11.01.2022 Cairns Expo today is done and dusted for Kingbrown camp oven kitchen. Nothing to report....oh except for this damper made with Strawberry Jam swirls and topped with whipped cream and Strawberry slices. There may have been a nip of rum involved as well I admit. Oh and some Pork Belly crackled over charcoal and simmered on s bed of Mango and chilli and sauced up with Captain Morgan Spiced Rum And some cinnamon date buns. Tea is looking pretty good tonight

10.01.2022 Its been blue skies and smiling faces all day at the 2020 South Queensland Caravan, Camping, Fishing & 4x4 Expo And im feeling fruity. So fruity in fact its taken over my food. Ive just cooked up a lump of pork belly by crackling it over the charcoal in my Compact Campfires then resting it on sliced chunks of mangoes that I dowsed with Captain Morgan Spiced Rum in the camp oven Tick and Tick

Some are very big, some are very old and some were just made this week at a local business and ive got a huge one its worth a look I'm planning an awesome weekend of cooking so come and listen and learn and laugh along with me. On my sales table I will have my cook book and my lifter of course. Ive also got a limited number ...of Compact Campfires so get in early stocks probably won't last all weekend. Message me if you want me to hold for you. The whole event is conducted with a management plan in place and enforced for covid safety. And trust me you will feel a lot safer here than you will at the local supermarket and big green hardware building. Them places have been turned into mosh pits since covid from what I've seen. 06.01.2022 Just a couple of highlights from the South Queensland Caravan, Camping, Fishing & 4x4 Expo. Didn't get many pics of the food but apparently the Rum and Raisin and Cinnamon Damper was acceptable Tomorrow I will be crackling up a very large piece of pork in an old large camp oven that was made in Scotland over 150 years ago.

05.01.2022 Great Day at the Cairns Expo today. Plain Damper, Dried Apticot and Camembert Damper made with Stones Green Ginger Wine. Then I knocked out a couple of chooks both with a stuffing of chopped dried Apricots, Seedy Bread, Chives and lumps of Jarlsberg Cheese. Choose were simmered in a few splashes of Stones Green Ginger Wine

04.01.2022 The World’s Best Fruitcake Recipe You will need the following: 1 cup of water... 1 cup of sugar 4 large eggs 2 cups dried fruit 1 tsp. Baking soda 1 cups of flour 1 tsp. Salt 1 cup brown sugar lemon juice nuts 1 FULL bottle of your favourite whiskey Sample the whiskey to check for quality. Take a large bowl. Check the whiskey again to make sure that it is of the highest quality. Pour 1 level cup and drink. Repeat. Turn on the electric mixer, beat 1 cup of butter in a large fluffy bowl. Add 1 tsp of sugar and beat again. Make sure the whiskey is still ok. Cry another tup. Turn off mixerer. Break two legs and add to the bowl and chuck in the cup of dried fruit. Mix on the turnerer. If the fruit gets stuck in the beaterers, pry it loose with the drewscriver. Next, sift 2 cups. Of salt. Or something. Who cares. Check the whiskey. Now sift the lemon juice and strain your nuts. Add one table. Shpoon. Of sugar. Or something Whatever Grease the oven. Turn the cake tin to 350 degreesh. Don’t forget to beat off the turnerer. Throw the bowl out of the window. Check the whishkey again. Go to bed. Who the hell likes fruitcake anyway?!

04.01.2022 The camp ovens really had a good workout this weekend at the 2021 Evans Head Drive-In Airshow as did my awesome staff. With the floods causing all the other food vendors to cancel at the last minute, the job got a bit bigger than expected. And I got to try out my food van for the first time. What a great investment that was. Just need to get some signage and graphics done now. I didn't have time to get many photos but managed to grab a couple of shots of some of the pork. T...hat's about 10 kilos worth in that oven, a fraction of what I cooked. Edited to add that you can't get crackle like this from the supermarket meat! I have tried many times and failed most times. The real butchers pork comes up like this every time I cook it. This lot came from one of the best butcher shops around Metcalf's Quality Meats. Must be beer o'clock now I think See more

03.01.2022 Best thing about camping at Townsville is cooking in Wals camp oven kitchen! For a camp oven cook this is how you build a proper working kitchen. Points to note. Wind breaked on 3 sides Coal building fire way off to one side... Raised platform for resting both modern and vintage style ovens on. This is great for distributing coals under and lessens the bending when stirring. Also the ovens sit solid so are safe, unlike a tripod or chain set up, ive got some significant scarring on one of my arms from an accident involving an oven full of boiling stew that was supported by chains only. And the front access is not blocked in by a high layer of rocks or bricks so you can easily access the coals with a shovel. Improvements that could be made would include An extra wall to shield the cooking area from the fire to stop the cooks getting cooked. Another camp oven platform across the back wall And a hanging rack for lifters and stirrers etc. The ovens im using are a nice mix of non collectable and very collectable with there being a Norvil camp oven, Norvil Pan with lid and a Metters and a little 9 inch sovereign hill oven. 03.01.2022 Two products I love to use with my camp oven cooking are my Compact Campfires and the Natural Wood Co charcoal. For many years I have been using various brands of beads and have put up with the unreliability of the burn time and quality. But after 2 days of beads failing to hold temperatures this last weekend I finally decided to give them the flick altogether. On Sunday I used the Natural Wood Co charcoal for both my top and bottom heat and I'm loving it. It burns very ho...t and stays hot for a long time. I have been using it on my Pro Q and my Bandit Smoker at home for a while now and I love the long burn times when doing brisket and ribs. Honestly I don't know why I didn't make the switch earlier as it burns for that long I only need to carry a third of the weight in fuel with me when I'm travelling. It comes in long tubular lengths that can be snapped off to whatever length is needed. These two products get the Kingbrown Tick of approval so you know you can buy with confidence. 03.01.2022 Got to stay at a pub named after a camp oven at Normanton Great atmosphere, cold beers, top meals and comfy rooms. The Albion Hotel Normanton is highly recommended if your up this way. Then I checked out the replica of the biggest croc ever recorded in the world. And the river where it lived. I wonder how old it was? Then back on the road with nothing but treeless plains and blue skies ahead. #Kingbrown windscreen tour.

02.01.2022 Did a bit of a windscreen tour today. Mainly to show some scenery to all those poor souls in lockdown in vic. Im living it up and making the best of it up here with you all in mind So today started with the 19km non stop corners of the Gillies Range with a dead set amazing breakfast at the Whistle Stop Cafe in Yungaburra at the top of the range. Then a visit to the giant curtain fig just out of town then on to the main destination of the day! And shock horror it was shut! T...he Gallow Cheese and Chocolate Dairy was shut! I was devastated i can tell you and it took me the next 2 antique shops to get over it. A nice little Albion oven would have eased the paIn but alas there was nothing but the usual trinkets, plates and uranium glassware. Any way after spending about an hour to get from Mareeba to Karunda due to roadworks, I missed the bloody turn and found myself sailing down the mountain range towards Cairns. So I headed into the main drag to check out the ocean. Unfortunately it wasn't home today . I could nearly see it So I condoled myself with some oysters, prawns and Red Emperor before heading back i to my Rainforest retreat to sit and watch the peacocks playing See more

01.01.2022 Ive just spent the morning picking up my brand new 21 inch personalised Aussie Oven Co. camp oven. I seriously can't wait to use this bad boy but I dont want to get it dirty either lol. Ive already got the 15 inch in my collection and it gets plenty of work as my main desert oven in my catering business. The finish and detail is fantastic, the signature gum leaf motif even has the gum nuts on it. The lid is a solid dead straight fit right round and the over all weight is less... than the weight of the lids on my cast ovens of the same size. I can see me using this quiet a lot for that reason alone. Best of all I got to meet team Aussie Oven Co, a father & son set up both with a clear passion for casting. And dead set down to earth fair dinkum Aussies they are. Its with genuine pleasure that I support their business. I got the grand tour right through the production process to the making of the wire springs for the bails and the lathed wooden handles on the frying pans. Everything is made by hand right there in the shop and even the jigs and wire twisting tools were designed and built right there. Ive always had a real soft spot for the old Gurranang foundry from down near Grafton. And the ovens are made from the same moulds today. The original 22 Gurranang is still high on my list of must haves for my collection. But im pretty happy now ive got one of the first to roll out the door of the modern version.
