15.01.2022 SLOW COOKER BEEF BONE BROTH RECIPE (Stay healthy, all!) 2-3 kg neck and marrow (leg) bones from grass-fed, pastured, organically raised cows Large pinch unrefined salt 1-2 Tablespoons apple cider vinegar... Filtered water Optional: onions, leeks, thyme, parsley, peppercorns, carrot, celery 1/ Preheat oven to 200C (400F) and line baking pan with baking (parchment) paper. 2/ Place bones in one layer on pan and sprinkle with salt. Roast in oven for 45 minutes. 3/ Remove from oven and allow to cool to touch. 4/ Place bones in slow cooker (along with any optional ingredients). Fill with water and add apple cider vinegar, ensuring bones are completely covered. The water should JUST cover the bones. If you have too much liquid in relation to bones, it will be difficult to achieve a gelatinous broth. Cook overnight or at least 12 hours on high or 24 hours on low. 5/ Cool broth and store refrigerated in glass jar up to 2 weeks. If there is a layer of fat (tallow) on top, broth will last up to six months in refrigerator! Ideally will be gelatinous when refrigerated (liquid when heated). Tallow can be used to saute veges. Broth can be frozen in ice cube trays or in jars, but ensure jars are filled only of the way. Re-use the bones for 2-3, sometimes 4 more batches of broth, until the bones look, well, not like bones anymore.. Then you’ll know you will have extracted all the nutrients out of them! Make sauces, bolognese, or sip (add some unrefined sea salt or even better, some Red Boat Fish Sauce before sipping). Beautiful bones from Free-Range Family Co-op

10.01.2022 Ginisang Munggo Here’s a Filipino sprouted mung bean stew with sliced pork tenderloin, prawns, spinach, some cherry tomatoes, lots of garlic and onions, in a base of beef bone broth and fish sauce. I didn’t have any bittermelon, but definitely would have added it if I had it. So simple - basically a one pot meal - and seriously delicious and nutritious. It’s got everything - sprouted mung beans (high in magnesium, iron and potassium), lean protein, lots of greens, gut-friend...ly collagen, and of course the immunity-boosting garlic and onions. I’d say Mom and Dad cooked this for us at least once a week, and leftovers actually taste better! I was inspired to recreate this talking to Mom and Dad last week.
