23.01.2022 Baking doesnt always mean that they come out the way you want it. Trying and failing is part and parcel of everyday life whether in the kitchen or out in the world. We learn from the mistakes, correct them the next time and move on to the next endeavour. This baking session of mine, I tried three different recipes - a french inspired prune custard tart, a pandan butter cake and a coconut tart. I successfully succeeded with the first and the last one whilst didnt get the 2nd o...ne right. The texture and the look of the butter cake was too dense and too dark. The next time I make this cake I'll need to reduce the oven temp and possibly the amount of moisture as well. 22.01.2022 My Sunday project today, the Malaysian version of empanadas we call currypuffs! A simple shortcrust pastry that encases a spicy filling mix of potatoes, sweet potatoes, onions, garlic and spices. Usually chicken and a sliced quarter of a hard boiled agg is also added to the filling before baking but today Ive made this a vegan batch and added Quorn's Meat Free Mince for a friend who doesnt eat any animal products. You can also make these currypuffs with the combination of oil and water based pastries to create the crispy spiral snail shell exterior to get that pattern and extra crunch. 03.01.2022 Happy Sunday everyone! This is my baking haul for today ~ Chocolate Orange Butter Cake, Pandan Coconut Butter Cake and some Portuguese Egg Tarts I was extremely happy with how these three came out today. The cakes both moist with a good crumb, not too sweet and they both satisfied my longest ever butter cake craving! The tarts are also super creamy and not too sweet with the slight caramelisation on the top. All I need now is a big cup of strong black tea to enjoy these yummy treats before my sister @patriciaycy comes back and hijacks them for herself! 02.01.2022 Thought I'd try my hand at a batch of cinnamon buns this time. Everytime I pass by a Cinnabon outlet, I can't resist the wafting smell of freshly baked buns packed with cinnamon goodness. I usually walk out with a 6 pack all for me! #notsharing This version I chose to try is by Chef Adrian Richardson of @lalunabistro that is located in Carlton North. These are chocolate cinnamon buns and they were a breeze to whip up.
