20.01.2022 Sherbet mimosa anyone?! Traditionally made with sparkling wine or champagne, I made these with lemonade so the kids could enjoy them...and they were a hit! Whipped up some sugar, frozen fruit and egg white into our famous fruity dream, scoop into a glass and pour lemonade/champagne over and enjoy! These would be a great treat for a birthday party or celebration, and best of all you can change up the flavour by choosing different frozen fruits.... 19.01.2022 Calling all chocolate lovers...decadent dark chocolate brownies! I made these for our Thermomix team virtual chocolate session on Zoom last night, they are my absolute favourite! Fudgy, cakey, with chunks of gooey chocolate goodness that serves well as a dessert or a very special treat, definitely not for the faint hearted! Add raspberries, nuts or other flavoured chocolate to easily change up the flavours and texture, served alongside some icecream or cream.... Have you made these yet? With Easter coming up, these are a great way to use up your chocolate

16.01.2022 One lonely chicken breast sitting in the fridge...perfect for shredded chicken to use in wraps/sandwiches or salads. I sliced it in half horizontally, popped it into the Varoma dish, 750ml water into the bowl with a tablespoon of vegetable stock paste and a good spoonful of ginger paste (steam will infuse the flavours into the chicken) 15 mins/Varoma temp/speed 1 Once cooked, I empty the liquid from the bowl, put the cooked chicken into the bowl and shredded it 3 sec/speed 4/reverse and you’ve got perfectly shredded chicken!

14.01.2022 A little bit of a cafe breakfast for dinner here tonight Using up the leftover veg in my fridge resulted in this little gem...Florentine Potato Cakes Sweet potato and white potato mixed with a bit of flour and egg to make potato cakes that were pan-fried crispy, baby spinach steamed and then pan fried in a little bit of butter, topped with soft boiled eggs, and drizzled with some balsamic glaze, yum! Simple, tasty and satisfying! ... My beautiful neighbour gifted me half a cabbage so I decided to make some Sauerkraut (fermented cabbage) For those not familiar with sauerkraut, it is incredibly healthy and nutritious. Packed full of nutrients such as vitamin C, iron and probiotics, it is great for boosting your immune system, helping aid digestion and great for gut health. So simple to make - chopped up cabbage and a little salt to release the liquid from the cabbage, muddled in...to a jar and put away in a dark spot for a week to ferment I’ll post the results in a week! 12.01.2022 An oldie but a goodie, Zucchini Slice! Tilly has been asking for days if I could make her some, and she has given this a 2 thumbs up...and she is a tough critic!! Perfect for a snack or as lunch with a salad, this is a good one to have on standby in your fridge or freezer. So easy to make, the thermomix sautés the onion and bacon for you, chops/grates the zucchini and cheese AND mixes it all together for you! Interestingly this recipe uses 100g rice flour, which keeps this... slice light and fluffy, but not something I keep in my cupboard. Using my Thermomix, I was able to mill some white rice grains to flour, no need to rush off to the supermarket to get some!
