25.01.2022 There are always left over bits in the cupboard ( in this case crispy noodles) ..so .. its an Asian rub chicken, pumpkin and potato curry topped with crispy noodles. Saut onion, add chopped chicken and 3 heaped teaspoons Asian rub. Saut about 4 minutes , add coconut milk or cream, half cup water or chicken stock cubed pumpkin and potato. Put the lid on and in 20 minutes voila!! Top with crispy noodles, no rice required, and home grown coriander.

Buckwheat makes a beautiful risotto, pearl barley has a wonderful texture and earthiness to it, Lentils work with everything . Ive got some spices if anyone needs anything but think Ill just post a recipe now and then as inspiration! #backtobasics

22.01.2022 Dukkah.. the good news story of the week... a teenager who is a bit (???) food fussy discovered dukkah and now the go to snack is bread, avocado, dukkah and sometimes even some crumbled feta!! Sure beats take away crap that she loves!!....part 2 ...she made herself some pasta, tossed in a bit of cheese and added porcini salt! Try your kids out on some real flavour....you might all be surprised!... To celebrate the new Tasmanian hazelnut dukkah I am offering a special until November 5... 250 gm bag for $20 plus post.

16.01.2022 Well hello out there!!!! I have been a bit quiet so thought I would inspire with a tasty winter dish.... Asian rubbed pork belly with udon noodle and soy broth...so yum!!!!.. Rub pork belly with Asian rub and slow roast till tender.....I went for 3 hours but it was a BIG piece of belly..... ( mind you this is the sort of thing you need to cook more of...its a bit more-ish)... Meanwhile heat stock with big slices of ginger, 1/4 cup light soy, dash or two of kecap manis, wh...en all is done, add udon noodles to stock, add some chopped greens ( bok Choy or Choy sum) get it all good and hot put into bowl, add a couple of slices of pork, some bean shoots, fresh coriander, chilli slices, crispies( fried shallots) and voila!!! Tasty lunch or dinner!! Its 7 degrees where I am right now so this seriously does the trick!!!!! See more

15.01.2022 The san choy bao recipe.... 1 onion diced 1 garlic diced 500 Gm chicken mince... 2 -4 teaspoons Limpopo Gourmet Asian Rub Dash peanut or vegetable oil 1/2 chilli chopped ( optional of course!) Fresh coriander Crispy fried noodles 1/2 packet pre soaked shiitake mushroom or fresh mushrooms sliced Heat oil, add onion and garlic . After about 3 minutes add Asian rub, then another minute add the chicken mince. Saut about 4 - 5 minutes....it might need a dash of water to keep it all moist. Add mushrooms and heat through. Turn off and sit for a minute or two. To serve.. Fill fresh lettuce cups with crispy noodles, top with chicken mixture, sprinkle with fresh herbs and if its your thing, a spoon of chilli jam. ( for broomies there is an awesome chilli at wings....Jing knows my favourite!)

Stock up on sweet rosie for the Christmas pudding!!!... for anyone in the east....I will be making Christmas puddings.. and festive tropical fruit cakes..... place orders via SMS or on fb.. taking orders until November 25. Not to neglect those in the west.... Asian rub and chilli salt are great accompaniments to all things seafood...prawns, fish and .....champagne for the festivities????....

15.01.2022 A beautiful summer salad..... Roast fresh cauliflower in the oven with a good sprinkle of zaatar and a spray of oil until soft. Cool. Toss with fresh leaves ( including spinach), cooled steamed green beans, blanched almonds, cooked lentils.....ok...you can use tinned ones.....and a dressing of olive oil blended with white wine vinegar, fresh parsley, fresh basil, pinch salt, pinch black pepper, dash lemon juice.... to jazz it up.... toss in marinated goats feta and poached chicken. Top with another sprinkle of zaatar...Seriously good. Goes well with a crisp white wine!!!

14.01.2022 The simple things in life.... pan fried chicken tenderloins tossed generously in creole( one of the original spices) serVed with home grown cherry tomatoes....whacked in the microwave for a minute and freshly picked snow peas... 5 minutes to make ... ssooo good... ssooo easy. Real food....real tasty!!!...no photo... I was too hungry!!!!

14.01.2022 I just used picadillo, my Mexican inspired spice to make pork carnitas.. slow cooked pork shoulder, pulled and wrapped in home made tortilla with a couple of traditional salsas. 05.01.2022 ola! winter brings out the need to cook those long slow tasty meals that , for me, make cooking a pleasure!....all Limpopo spices are sssooo good for slow cooking..I will post some inspiration in the next few days, but to start, why not a tasty morrocan vegetable soup... fry off 2 diced onions, 1 chopped garlic, 2 tablespoons oil and 3 teaspoons ras-el-hanout. cook for 4 - 5 minutes then add 2 large tins of tomato, chopped pumpkin, potato, sweet potato, cauliflower, brussel s...prouts, mushroom...pretty much anything! ( good way to clean out the fridge too!!). Cook for about an hour, stirring occasionally and done...grab a fresh bread, warm it if you feel the need..and there is a beautiful lunch or dinner..fresh herbs are always a nice addition to the top ( parsley, coriander, basil...) also...HELP!!!!!...i am teaching some cooking schools later in the month and one is"introduction to cooking"...what does that bring to mind for you???? if you need to order any spices, email, sms or online...
