The chalet was absolutely perfect, with a full kitchen and bathroom and even a washing machine and dryer. The lounge room was modern and classy but simple, and the bed was extremely comfortable and clean. We were down that way for a Ghost Tour and spent a lot of the evening out of the room, but would love to stay again in the future. Thank you for such a wonderful ...stay." 23.01.2022 !!!!!!!RE-OPENING ANNOUNCEMENT!!!!!!! After being forced to shut our doors to our beloved customers on March the 24th and nearly 5 months closed we are so hap...py to let you know we will be reopening our Port Arthur Cafe and Distillery on the 4th, 5th and 6th of September. We will be opening every Friday, Saturday and Sunday to begin with and will also open every day during the Tasmanian school holidays in September. We would personally like to thank the huge amount of people that have contacted us over the last 5 months. To hear how much the farm means to people has been something of great joy and probably not something we had time to stop and reflect on in the past. It was just a seed of an idea 6 years ago that started this all off and we never expected our business to grow and become an entrenched part of the beautiful Tasman Peninsula in the way that it has. Our staff are second to none and we are so proud of the team that we have and its such a privilege that we get to work with the people we do everyday. They have shown determination to stick it out with us and we couldn't be prouder to stand beside them when we re-open our doors. Everyone's calls and emails have been what has spurred us on to keep going and we can't wait to catch up with everyone again VERY SOON! 23.01.2022 I had a fun, but busy day teaching a Tasman Peninsula cooking workshop @littlenorfolkbayeventschalets . Filleting fish, cleaning occy, shucking oysters and more.... With distancing in place, so a different feast now. I was extra aware to make sure that the workshop and lunch is still a friendly and social event for guests attending on their own , as most people do attend on their own. We always joke workshops are nightclubbing for the over 40s , I love attending a workshop myself!! Unfortunately, as usual, I only managed to snap a few before the workshop pics on my iPhone and then a few after. Loads of delicious food was prepared and cooked; quail, wallaby, octopus, salmon, wrasse, scallops, mussels, trumpeter and more. And we had a treat of new season @freshfieldgrove olive oil and a delicious new local wine from @saltwaterriverwines . That wine will be appearing regularly at my dinners and events, the oil already does. I was excited to get to work today and see I have a stunning tulip already!!?! 12.01.2022 I made Fi from @freshfieldgrove Extra Virgin Olive Oil cake again today , this recipe in my new book The Tasmania Pantry 2, with lavender and quince today, so y...um! The cake was morning tea on arrival for my workshop guests @littlenorfolkbayeventschalets then we: Cleaned occy to grill with oregano and garlic and a few legs in to bake with evoo. Made bread for a rosemary and garlic pizza bread. Shucked @theoysterprovince angasi oysters, fried a few with salt and Sichuan pepper and others into a miso wakame broth. Cleaned fish for sashimi and baked some topped with skordallia. Steamed parrot fish Hong king style. Made pasta and ricotta for a pumpkin cannelloni. Grilled wallaby with quince blue cheese and vino cotto. A fun day finished setting up for this weekends Indulgence weekend. 04.01.2022 I have just finished cooking up an epic seafood feast for a Seafood Cooking Retreat at Little Norfolk bay events and chalets. All the seafood was sourced locall...y straight form Brendan (wrasse, Occy and bay trumpeter) and his friends (crayfish and abalone) and the oysters straight from Cameron’s oyster farm. I did need to pop into Ashmore’s for some mussels, and left with the mussels, wakame, scallops, smoked ocean trout, Tassal salmon, hot smoked salmon, and a very indulgent jar of Petuna caviar, literally like a kid in a candy store. We filleted, gutted, shucked and cleaned all the seafood and cooked it into 22 dishes over 5 meals that the attendees got to enjoy as multicourse tasting meals with Cape Bernier and Bream creek wines and posh grown up soft drinks from Ashbolt Farm . While planning the cooking and workshops I made sure to include plenty of advice for quick and economical weeknight meals, that’s what my book Seafood Everyday was created for, seafood is NOT difficult to cook and not all of it is expensive. So, we made dill curry paste and laksa, to freeze the pastes and they are ready for a super quick weeknight meal with mussels or an economical fish. One comment from one lady attending after trying the wakame, miso oyster broth was that she had never thought of oysters in a soup, and she loved it. As luxurious as it is to scoff a dozen oysters, you really only need 3 oysters for the nutrition benefits so a dozen oysters make a pretty economical meal for a family of four, and with a good quality miso paste in the fridge and dried wakame in the pantry and some other greens, it’s an easy to whip up soup, for a meal that is so tasty. We cooked: Oyster agrumato and caviar oyster wakame miso broth Sashimi wrasse, Tassal salmon and scallops Abalone confit Chilli, tomato, olive slow cooked octopus Hong Kong style steamed wrasse Smoked fish Benedict with smoked ocean trout and caviar Wrasse carpaccio Olive oil baked octopus Oysters Florentine Confit abalone with soy and sesame Scallops and handmade pasta Laksa with mussels and trumpeter Herb pull apart bread Oysters natural Wrasse tartare Crayfish cooked natural with lavender aioli (an amazing combination) Tassal salmon and saffron butter Trumpeter with lemon, oregano and skordallia Dill curry mussels Fetta Omelette with smoked fish and smoked salmon and caviar A super fun weekend! Next weekend I have a Tasman Cooking experience on Sunday there will be fresh fish as well as local quail wallaby and more, this one is a just the day workshop with lunch, it is $145 for the morning class and lunch. 04.01.2022 My flowers for @littlenorfolkbayeventschalets are very springy today. We are nearly there, Winter of 2020 is nearly over! We do appreciate all the lovely Tasma...nian’s who have supported us after the lockdown and kept us busy every weekend This weekend we’ve got 5 couples booking the chalets and event house as a private group. It has worked out well for them too they could take advantage of our 2 night special which includes a meal to heat tonight (fish pie and fish lasagne) and a bottle of wine. I’ve set them a lovely table in the event house, and put a tv in there (in case someone needs to watch the footy!) . This group have also booked me to go in to cook them something a bit fancier for dinner tomorrow night. Included in the 2 night special they have fresh Home made bread for toast to go with the jams I made over summer and lavender granola in the fridges for breakfast. I think they are in for a fun weekend. I am now planning for events, Indulgence Weekends and workshops for later in the year. The weekends are filling up so get in early if you have a private group or a request for a date for me to plan a workshop or Indulgence weekend. We do have Lots of weekdays available so get onto your boss to plan a team building/planning corporate retreat.
