25.01.2022 Gluten Free Bread Recipe Preparation: 10 minutes Cooking: 50 minutes... Ingredients: for 1 loaf 3/4 cup Rice flour 2/3 cup Tapioca flour 1/2 cup Buckwheat flour 2/3 cup Flax seeds (pre ground into meal) 4 teasp Chia seeds 2 teasp Psyllium husk 1 teasp Slippery Elm powder 1 teasp Baking soda 1 teasp Salt 3/4 Cup Water 4 Tabsp Olive oil 2 Tabsp Lemon juice 1 Green Apple (skin on ok) 2 Egg Instructions: Pre-heat oven to 180 degC. Use food processor or bullet style blender to blitz up the apple, oil, lemon juice & water together. Into the blender mixture add the 2 eggs, & blitz only for 2 seconds to complete. In a separate bowl, mix all the other dry ingredients together. Scrape the blended wet mixture into the bowl ingredients, & mix quickly, just until all flour has been moistened. Don’t mix too long. Bubbles will form, which need to be preserved for a less dense bread. Transfer completed mixture immediately into a loaf pan to retain as many bubbles as possible. Bake for 50 minutes. Take the loaf from the oven and let sit for 20 minutes before cutting, in case the centre is not finished cooking. Enjoy this bread which is very high in protein & fibre, and should assist in healthy bowel movements. Unlike conventional breads which can have the opposite effect.
