16.01.2022 It is not ‘carbohydrates’ that cause insulin resistance. Insulin resistance is caused by a build-up of fat inside muscle and liver cells. Studies have shown tha...t high intake of saturated fat, as opposed to monounsaturated and polyunsaturated fats, causes insulin resistance, impairs insulin secretion and is toxic to the cells that produce insulin in the pancreas. Eating greater amounts of saturated fat is also linked to high blood cholesterol levels and an increased risk of heart disease. Carbohydrates are a broad category and they are not all created equal. Fibre and starch, both carbohydrates, make up a crucial part of a healthful diet. People, with or without diabetes, should include an abundant diversity of these healthful foods in their diet. Just wash your potatoes (any kind!) and spike the skin with a fork, put them in the microwave until just cooked, then cut them into wedges and place in your air-fryer or a lined baking tray.... . Sprinkle with herbs, garlic and chilli (or your favourite seasonings) and bake for 10 minutes at 200C. Viola!! Crispy, oil-free potato wedges! . NOTE: this works great with pre-cooked white or sweet potatoes that have been refrigerated too!
