24.01.2022 Eldon and I went down town for a fun day out and ended up trying a new flavour of gelato. OMG it was delightful! Pansy Passion has a really light zingy flavour, that tastes similar to a tropical Frosty Fruit icy pole. I really loved it! This is a limited edition flavour for #gelatissimotoowoomba as a celebration for Carnival Of the Flowers, which also happens to be my favourite time of year. 21.01.2022 I can't really call this #isobaking anymore. The kids are at school, the husband is on a week holiday, the 3 year old is loving every second of having his dad home. So with Eldon having Dad's one-on-one attention I was able to tidy, organise and bake. If it is one thing I will take away from quarantine, it is baking. I honestly think I'm getting better. I don't really remember my mum baking much when I was growing up and if she did, I don't think I was really involved. I also... don't remember the intergenerational knowledge of cooking being passed down from my Narna, so my love of baking has only really started when I moved into my own home with a large oven that I had to figure out. The temperature dial is worn so it has been guess work, but I am pretty sure I have it figured out now. I'm able to identify if a mix doesn't look right and am learning about substitution of ingredients. Iso has just given me unlimited time to spend on it. I am constantly messaging my cake baking and pastry Chef friends for advice But I have to learn from somewhere. I hope they don't mind my constant need of assistance haha. . . 12.01.2022 Last week I was gifted a Gelatissimo DIY bambino kit from a good friend of mine @achiany. With the flavours choc brownie and vanilla (nom nom nom) it was so fun! The kids got super messy and enjoyed eating and making their bambino cones. Eldon mostly just ate the chocolate sauce, I think he would've swam in it if the opportunity arose lol. The kit included: 500ml gelato take home pack 12 teeny bambino cones, perfect for little hands... sprinkles chocolate sauce. gloves trays and liner to catch the drips! Recipe instruction card The sauce had set a bit so I melted in the microwave for 30 seconds or so and mixed through to make the perfect dipping consistency. If you are wanting to bless your own family, or someone else's during the next couple of months of iso, you should defs ring up your local Gelatissimo and see if they have this kit available. 09.01.2022 This morning I blew my own mind! I was up at 6.50am and decided I needed to cook brownies for the lunchbox in my new convection microwave. I whipped up the batter with a cake mix to make things quicker and the instructions said 30 minutes to bake. By this time it is 7.10am and I put the correct settings on my microwave to cook brownie. 12 minutes later... They were DONE!! crispy, fudgy and chewy. OMG, I am so impressed with this microwave oven and all its settings haha. While... the brownies were baking I made pancakes, packed 4 lunches and got the preppy completely ready. Brian made popcorn and I got Juliet some breakfast. All kids and husband were out the door and on the way to school by 7.55am. I am so impressed with this Ariston microwave, I have cooked all sorts of things in it including melts, pizza, nuggets, chips and all your normal reheating leftovers. At first I was a bit unsure after all the hassle it took to get the thing, and how large it is. I worried that I wouldn't use its features, but honestly could not be happier now. 06.01.2022 Step by step making meringues with 5yo Iron Man. Can I say, these are amazing! I cooked them on very low for 3.5hours and then let them cool in oven. As I bite into them, light, fluffy and airy. Absolute perfection. My second time making meringue and I think I could easily do it again... although it took me 18 eggs to get 10 egg whites haha. Breaking the yolk of 8 and having it seep into the white. Whoops haha. This was a great lesson in patience for my preppy and it had a great reward. 03.01.2022 So, Who else has made HCB this Easter? Thanks to isolation, a lot of us have stacks of time on our hands, and quite a few of us are baking HCB and Cinnamon Scrolls (next on my to bake list). I would highly recommend the Donna Hay recipe for HCB. Mine turned out very fluffy, very soft and quite tasty. I will leave out the mixed peel next time, because I am not a fan of the zingy flavour that comes with it, but my husband loves them! Last year I made a heap of them, I was proud as punch, but something just wasn't right. They were bland and dense, maybe I overworked the dough? 03.01.2022 This is what $70 of fresh produce looks like. Every week I buy an orange tree of oranges. Today was a great day for market shopping. 2kg of strawberries, 4kg bananas, 15kgs oranges, lettuce, broccoli, 3 large zuchinni, 1kg roma tomatoes, 500g cherry tomatoes, 1kg onion, 2kg apple, 1kg mandarins, bok choy, 2kg grapes, 250g radishes, 2 rock melon 1kg carotts, 3 capsicum, 250g beans. This will do our family of 6 for the week and we'll have oranges left for juicing and apples will trail into next week. So many seasonal produce at great prices. 01.01.2022 This morning was a bit of a shocker... the thing is, it wasn't the kids, they were great and ready! It was all me. After realising we were going to be late, I packed them up in the car, with fruit in lunch boxes, dropped them off and took their lunch boxes to the supermarket to fill them up. Our school doesn't have a tuck shop, so I have to improvise on days like this. I set there boxes up in the boot of the car and portioned them all out, before dropping them into the school for the kids to collect at lunch. 01.01.2022 Last week, Master 8 requested my Aunty's "Family Favourite" cobb loaf dip for dinner. I told him to write it on our meal plan board so I would remember to get what I needed. I have loved this since I was a kid and I remember it being the first thing requested at family parties and BBQs. When I moved out of home I would call her every time I wanted to cook it... every single time Two years ago, she put together a recipe book with all the extended families favourite recipes a...nd was gracious enough to send me a copy. It was professionally bound and formatted so it ended up costing her a bit, but I am so grateful, I refer to it all the time.
