25.01.2022 4hrs in to our 16hr mad dash back to Melbourne to beat the border closure.. I’ve heard there are massive delays at checkpoints and was wondering if there’s any other people that have traveled back and which border crossing would be best? Time is of the essence LA P.S don’t get me started on my thoughts on the whole thing, I’ve already cursed enough to make a sailor blush!!

16.01.2022 Was having the BEST holiday back home in Grafton before the government ordered us back to VIC. We were camping on Gumbaynggirr country, beautiful few days with no phone service before the river rose 2.66m telling us to leave and nearly washing away our camp before it receded. It was a sign, if we didn’t leave right away we wouldn’t have made it across the border in time. Still, I got to see my family again, first time in 14months. Cuddled my beautiful Mumma in the nursing home, great Xmas feed, mowed Dad’s block, swam in the ocean, had a couple beers at my local with a best mate and most of all, recharged my soul! 11.01.2022 How to put new life to Chilli Con Carne frozen from last month.. Stuff it! Oh and serve with char grilled corn tossed with Red Cabbage, chopped jalapeño, 1/2 tsp cumin powder, fresh lime juice, soft fetta, fresh coriander and olive oil salsa! LA

08.01.2022 Tonight my body needed a good hit of chilli. So I made a traditional dish from Chaing Mai Thailand called Hung Lay Pork Curry. It’s my first attempt and far out it’s amazing!! Slow cooked pork belly, ginger, galangal, garam masala, Tumeric, chilli, lemongrass etc.. alllllll the goodness served with Jasmine Rice and blanched Chinese broccoli tossed in sesame oil.. #yum
