02.01.2022 If you've never had preserved limes before this is definitely the recipe to start with! Preserved limes with ginger & garlic (aka OMG limes) 14 Willowbank limes... 7.5 cm fresh Willowbank root ginger (peeled and cut into fine strips) 4 cloves Willowbank garlic (quartered lengthways - optional) 6 teaspoons salt 3 large green chilli (fresh and up to you if you remove the seeds) 225 ml white wine vinegar 400 grams sugar Willowbank mint (optional) I do wash and sterilise my jar in the oven on 120 degrees for 30 minutes (or if the timing works run it through the dishwasher) Cut 6 limes lengthwise in 6 equal parts. Put a layer of lime pieces on the bottom of a large jar, cut side outward. Sprinkle over some garlic, ginger and salt. Add 1 teaspoon of salt. Repeat with further layers of lime, ginger, garlic and salt. Push the ingredients down to eliminate as much air as possible and add a chilli pepper here and there. Keep going until the jar is filled up to a couple of centimetres below the rim. Press the remaining limes to get 200 ml of juice. Pour into a saucepan with the vinegar and the sugar. Slowly heat up, stirring until the sugar is dissolved. Allow to cook until you have obtained a syrup. If you can fit in the limes you’ve squeezed put this flesh in too. Pour this syrup into the jar and give the jar a gentle tap and a shake (careful! Hot!) to allow air bubbles to escape. If the limes float, push them under with a scrunched up piece of greaseproof paper. Close the jar with an airtight, acid-proof seal (I like to use jars with the rubber seals). Allow to stand for 1 month in a sunny and warm place, then keep another 2 to 4 weeks before use. These preserve very, very well. Sometimes I reduce the amount of garlic by half and add a couple of leaves of mint instead, just for a change. This is a delicious change too! I usually do a big preserved lime session so maybe 2 4 jars at a time and while I’m not recommending that you do this, I have kept my preserved lime in jars for up to 2 years and they are still bloody delicious! These preserved limes are simply sensational and are perfect with a salad, roast veggies, stuffings, on a charcuterie plate or cheese platter or in a tagine. If you put them on the table they will be eaten. Beautiful gift to a special friend, they will love you forever or even for your child’s teacher at Christmas. I have never used lemons for this recipe but I think you could, if you did I would recommend Myer lemons I think as they are thin skinned. ENJOY! See more
