25.01.2022 With the new Stage Three restrictions announced yesterday, we have felt the disappointment ripple across our community. While we are fortunate enough to be staying open at this stage, we understand that many people may have returned to lockdown and are unable to leave their homes. In light of this news, we have decided to reduce our delivery fees. Delivery will now be $5 for homes within 5km of the Prahran Market, and $15 for homes between 5-10km of the Prahran Market.... We still have our delicious toasties (uncooked), cheeses, milk, yoghurt, butter and accompaniments available on our online store. Stay safe, Melbourne. 24.01.2022 In 2017, we brought out our Truffle Brioche for the first time during truffle season and its been a winter favourite ever since. Our truffles are from @damianpike who sourced these from family-run Five Acre Nursery in WA. Theyve been operating for over 20 years, and waited 7 years after planting to harvest their first batch of truffles. These truffles are grown under oak and hazelnut trees, adding to their enticing flavour and aroma. ... 23.01.2022 Say hello to three incredible Pecorino from the picturesque national park of Cilento in the province of Salerno, Italy. These three were all made during the European summer of 2019 and reflect the delicate sweet, grassy and nutty flavours we have come to love from proper Pecorino! When made with fresh milk from animals that graze on only fresh grass, and matured with care in a purpose-built wooden cave, the final product reflects the beautiful microflora of this le...gendairy milk that is revered across Italy. First up is Cinerino - matured with a film of ash on its rind which protects the moisture content of the cheese, ensuring its delicate flavours and creamy texture are not lost during the ageing process. In the back row we have Canestrato - rubbed with oil during a slightly longer maturation, resulting in a cheese with a bit more length of flavour and hints of salt. The perfect parmesan substitute for anyone with a cows milk protein allergy. 22.01.2022 Todays ripe and ready cheese is the Petit Langres AOC from Fromagerie Germain Dating back to the 18th century, this fudge-like washed rind cheese from the high plains of Langres in Champagne is distinguished by a small indented basin in the top. When scored with an X through to the middle, this cheese is perfect with a 30mL splash of champagne on top. ... Let it sit wrapped in the fridge overnight before serving to enhance its umami and yeasty flavours. We age our Langres in our purpose-built maturation room for a further 3 weeks after their airfreight arrival. Today, our cheesemongers recommend: ... Our Brilliant Savarin is in its prime - matured 6 weeks it has a milky taste that will become more earthy over the next few weeks. Great on your cheese plate with fruit (especially berries). Langres is famously washed with champagne and delicious with sourdough bread. Made from cows milk, this cheese is a little soft and crumbly on the inside. If you love Epoisses but are looking for something a little lighter, Langres is the perfect option. If you dont have any champagne at home to pair it with, a red wine from Burgundy will also do well. Pecorino Calcagno is perfect shaved over pasta or a rocket salad. Made in Sardinia, Italy from sheep milk, its mild, grassy with flavours that represent the land with just the right balance of salt. Available from our online shop - link in bio.
