20.01.2022 I often get asked how do I pickle my eggplant. Here is a quick and simple way... 1. Peel and julienne the eggplant. Place in a container, lightly salt the eggplant and add enough vinegar to cover. Do this after each eggplant as this will keep them from going dark. 2. Place a weight on top to keep eggplants under the vinegar. Leave for 24hrs 3. After 24hrs drain eggplants and squeeze out the excess moisture. Place in a bowl and add garlic, oregano, or if you prefer mint, chilli and enough oil to mix in all the ingredients. Place eggplant in a jar and top with oil. I use olive oil. Make certain that the oil is covering the top of the eggplant.

17.01.2022 Cannoli anyone?? These cannoli with the tradional vanilla and chocolate custard filling, will be available at the Mareeba Markets on Saturday.

15.01.2022 Sundried Tomatoes 1. Wash, quarter and scoop out the inside of the tomatoes. 2. Place a tablecloth or sheet over a rack, or bit of fencing panel as shown and peg into place. If it's windy, you might find your tomatoes on the ground. 3. Place tomatoes all the same way up, this makes it easier to see which ones you have rotated later on. Sprinkle salt over the tomatoes. If you put the tomatoes out around 8.00am, at around 12.00pm, turn them over and salt the other side. This ...procedure only needs to be done once with the salt. Keep an eye out for the weather. If it's looks like rain, bring your tomatoes in. Also, tomatoes need to be taken in at night and put back out in the morning. By leaving them out, the night dew will fall on them. If the days are hot and dry, within 3 - 4 days they will be dry. Once my tomatoes are dry, I will post the next steps See more

12.01.2022 Well, it only took 2 days for my tomatoes to dry and I did have to rescue some of them off the ground. Once dry, place a pot of water to the boil. Put the tomatoes in only for a few seconds and then into cold water. This takes most of the salt out and rehydrates the tomatoes slightly. Drain and pat dry the tomatoes. I then dress them with olive oil, garlic and oregano. If you have a lot of dried tomatoes, they will keep in the freezer until you need them and then follow the above procedure. I know it's quicker with a dehydrator, but now you know the sundried method.

Australian Bega is buying these brands in a half-a-billion dollar deal from Japanese owned Lion Dairy and Drinks Last year t...hese brands were sold to Chinese Mengniu Dairy. The sale was approved AND recommended by Australia’s Foreign Investment Review Board. In the final moments, Treasurer Frydenberg halted the sale citing a conflict with national interest. Chinese Mengniu Dairy’s biggest shareholder is ..the Chinese Communist Party So it was a fair call! Did you know, this sale includes Australia’s ONLY national cold chain distribution network Yep, until now this supply chain has been owned by an overseas company. Don’t think that’s a big deal?? $70 MILLION of Australian dairy is spoiled every year due to problems (e.g. delays, mismanagement) along our cold chain distribution network. Australia’s dairy industry has been gutted over the years and dairy farmers have taken a beating. A number of parliamentary committees looked into the Australian dairy industry over many years and guess what happened with all those reports. A whole lot of nothing! So farmer representative groups have been calling for a Royal Commission into the Dairy industry to resolve these issues once and for allBring it on!
