Claudio always recommends using capers with any sort of poultry dish - alongside garlic, basil & lemon. 05.01.2022 Finocchiona Salami is a Tuscan speciality, hailing from the Florence area. It's claim to fame is the incredible use of fennel which gives the salami a delicate taste and aroma.. Riccardo has enjoyed this salami many times whilst travelling through Tuscany; he recommends do as a locals and slice it paper thin to really appreciate the flavour.
